— G's SPICY NEW MEXICAN APPLE PIE served with Tahitian Vanilla Gelato, topped w/ a Cinnamon Whiskey Caramel Sauce... ! Yes...it was absolutely delicious, and the flavor profiles were mind blowing!🔥

The apple filling I cooked is based an innovative recipe that apparently originated in New Mexico — a basic apple filling, but with green chiles added.

I amped it up even more with lots of Roasted Saigon cinnamon, chili powder, and ground Ghost Chile Peppers. Yes...I said GHOST CHILE peppers. And to the caramel cinnamon whiskey sauce I added some crushed Mexican Arbol chiles. Believe it or not, when the combination of all the ingredients hits the palate, the explosion of flavors actually balance well with the peppers to create a "sweet heat" that dances happily across the taste buds. Also really cool is experiencing the different textures — the crunchiness of the cinnamon sugar taco shell, the softness of the warm apples, and the cold creaminess of the gelato.

G's Spiced Banana🍌 Bread, "spiced" with roasted Saigon cinnamon, nutmeg, vanilla and almond extracts, Jamaican rum, and some other stuff...👌🏾

For my I never measure spices. A teaspoon of this or that ain't gonna cut it for me...jus'sayin. And my bananas weren't fully ripe. I poked a few holes in them with a fork, then put them in the microwave whole for about a minute at a time until they reached the softness that I wanted. If you look closely you can see nice chunks of banana that really complement the texture of the bread.

The basic recipe is really simple. Try it, and I guarantee that you won't be disappointed...(see recipe in comments below).

G's World Market Black Champagne Shrimp Risotto...🔥 This was REALLY delicious, but I wasn't completely satisfied with it. The risotto rice came in a jar from World Market that was already mixed with seasonings. For some reason it wasn't as good as when I make it with my preferred arborio Italian rice. But if you've never tasted risotto made with all instead of water, you have no idea what you're missing!

G's Gulf Shrimp Gourmet Pizza 🍕

Back in the day in my hometown of Lake Charles, La, there was a restaurant called Tony's Pizza that served an AWESOME shrimp . I never forgot the flavor of the shrimp and the perfect crust. I went there as an adult a few years ago and ordered a pizza, but the taste and quality just weren't the same. Oh well...🤷🏾‍♂️

Well I had some shrimp that I needed to use, and I decided to make a pizza with them. I prepared a quick thin crust dough, partially baked it to amp up the crispiness, then topped it with red/orange/green bell peppers, Castelvetrano olives, and mozzarella... ! So good!

CHEF G'S SEAFOOD ST. JACQUES & CHAMPAGNE RISOTTO...with a twist...

Here is a variation of a dish called 'Coquilles St. Jacques'. Traditionally served with mushrooms in a scallop shell, this dish consists of scallops in a creamy wine sauce, topped with breadcrumbs or cheese, and browned under a broiler. Well I didn’t have scallops, and I did not have fancy sea shells to serve the non-existent scallops. So I followed the basic premise of the recipe using Louisiana crawfish tails, lump crab meat, and Gulf shrimp. And instead of just plain mushrooms, I decided to make a risotto with mushrooms and fresh chopped asparagus.

So if I was describe the finished dish, I would say something like ---

"Crawfish & lump crab poached in white wine and pan-seared Gulf shrimp, served atop a homemade Portobello mushroom & asparagus risotto, and finished with shredded Gruyere and sharp Provolone cheeses, and a cream reduction sauce made with the reserved seafood-wine liquid."

(Side note: About a year or so after I prepared this dish, a good friend gifted me a set of giant clam serving shells so I could serve this dish properly. 😉👌🏾)

So I made some chicken with a homemade stock, and used some of the same ingredients to prepare this dish. I found the basic recipe in a ‘Fine Living’ magazine that I’ve had lying around the house for a couple of years. This stew is reminiscent of a chicken dish because of the warm, earthy spices infused in this savory concoction. The olives and lemon added a light zestiness that is perfect for casual entertaining or even comfort food. After a day or two…it tastes even better.

G's Homemade Cranberry . Absolutely flavorful and delicious. I usually make my own dough from scratch, and it can get tedious. But this time I decided to use ready-made pie from the grocery store. The filling is my merlot made with fresh cranberries. I drizzled the finished tarts with a powdered sugar glaze, and added some sparkly toppings just for fun.

G's Wagyu Osso Buco w/ seasoned Basmati rice. ! 👌🏾🔥🔥

It translates to "bone with a hole" in Italian, and is a classic dish from the Lombardy region of Italy. It is made by braising veal shanks with vegetables, white wine, and broth.

I made a simple version without all the veggies and fancy stuff so my stepson would find it palatable...😁 But this is one of my most favoritest cuts of beef! I used red wine Instead of white. Absolutely !
