— G's SPICY NEW MEXICAN APPLE PIE served with Tahitian Vanilla Gelato, topped w/ a Cinnamon Whiskey Caramel Sauce... ! Yes...it was absolutely delicious, and the flavor profiles were mind blowing!🔥
The apple filling I cooked is based an innovative recipe that apparently originated in New Mexico — a basic apple filling, but with green chiles added.
I amped it up even more with lots of Roasted Saigon cinnamon, chili powder, and ground Ghost Chile Peppers. Yes...I said GHOST CHILE peppers. And to the caramel cinnamon whiskey sauce I added some crushed Mexican Arbol chiles. Believe it or not, when the combination of all the ingredients hits the palate, the explosion of flavors actually balance well with the peppers to create a "sweet heat" that dances happily across the taste buds. Also really cool is experiencing the different textures — the crunchiness of the cinnamon sugar taco shell, the softness of the warm apples, and the cold creaminess of the gelato.
