Creamy Chicken Carbonara

Ingredients:
4 boneless, skinless chicken breasts
1 pound spaghetti
8 strips of bacon, diced
1 onion, chopped
4 cloves of garlic, minced
2 cups heavy cream
1 cup grated parmesan cheese
1 cup grated pecorino romano cheese
4 egg yolks
Salt and pepper to taste

Instructions:
Cook the spaghetti according to package instructions, drain and set aside.
In a large pan, cook the diced bacon until crispy. Remove from the pan and set aside.
In the same pan, cook the chicken until browned on both sides, about 4-5 minutes per side. Remove from the pan and set aside.
In the same pan, sauté the onion and garlic until soft and translucent, about 2-3 minutes.
In a separate bowl, whisk together the heavy cream, parmesan cheese, pecorino romano cheese, and egg yolks.
Cut the chicken into bite-sized pieces and add it back to the pan with the onions and garlic.
Pour the cream mixture over the chicken and stir until fully combined.
Add the cooked spaghetti to the pan and mix until the spaghetti is coated in the sauce.
Add the crispy bacon to the pan and stir to combine.
Season with salt and pepper to taste. Serve hot. Enjoy!
