Easy dinner idea! Chicken Scallopini
👉Ingredients
-4 chicken cutlets
-salt & pepper
-1/4 cup flour
-1 tbs flour
-1/4 cup dry white wine
-1/8 cup fresh lemon juice
-1 tbs butter
-1/8 cup drained capers
-optional garnish-artichokes, parsley
👉Instructions
1. Season cutlets with salt & pepper and coat with flour
2. In skillet heat butter then add chicken & cook until golden brown on both sides (about 5 mins) then transfer chicken and cover with foil
3. Mix wine & lemon juice to skillet on medium-high heat then remove from heat and whisk in butter until incorporated, stir in capers
4. Add chicken back to skillet and coat with sauce
5. Garnish with parsley, artichokes and lemon wedges
We served with rice pilaf and grilled vegetables. Let us know if you try it!
