“Next up we have Chef Leni Rose Magsino of The Perfect Pear Catering Co. and Lola Foodtruck Jax for our Annual Taste of the Philippines at Museum of Science & History, Jacksonville in partnership with Jax Filipinos on October 24, 6-9.
This year each chef was asked to prepare a dish from a specific region in the Philippines. The Philippines is made up of over 7,000 islands so the food can vary from region to region.
Chef Leni will be serving Hardinera (Jardinera), also known as the Quezon meatloaf or the Lucban meatloaf, it is a Filipino meatloaf made with diced or ground pork topped with sliced hard-boiled eggs, pineapples, carrots, bell peppers, peas, tomatoes, and raisins, among others. The ingredients used are identical to the ones used in Filipino menudo; while the cooking process is similar to the Filipino embutido. It is traditionally steamed in an oval-shaped tin mold known as a llanera (or lyanera),
which is also used to make lecheflan. It is a pretty dish befitting a typical Filipino banquet. Preparing Hardinera can take some time which is why you only usually see this during fiestas and holidays. It originates from the province of Quezon in Luzon
