Hey Nykz Squad,

Have you had Coconut Curry Cowfoot and Beans, if not you are definitely missing out!

Here's a delicious Jamaican-style Coconut Curry cowfoot recipe that is hearty, flavorful, and perfect for a comforting meal:
Ingredients:
• 2 lbs cow foot, cleaned and chopped
• 2 tbsp curry powder
• 1 tsp turmeric powder
• 1 large onion, chopped
• 4 cloves garlic, minced
• 1 piece ginger (about 1 inch), grated
• 2-3 sprigs of thyme
• 2-3 scallions (green onions), chopped
• 1 scotch bonnet pepper (optional, for heat)
• 2 medium carrots, sliced
• 1 can Grace Broad Beans
• 1 can coconut milk (optional, for a richer flavor)
• 4 cups water or beef broth
• Salt and pepper to taste
• 2 tbsp vegetable oil
• 1 tbsp all-purpose seasoning or meat seasoning
• 1 tbsp Jerk Powder Seasoning
• 1 lime or lemon (for cleaning the cow foot)
Instructions:
1. Prepare the Cow Foot:
• Wash the cow foot pieces thoroughly with water and lime or lemon juice to remove any odors and impurities. Drain well.
2. Season the Cow Foot:
• In a large bowl, combine the cow foot pieces with 1 tablespoon of curry powder, all-purpose and jerk seasoning, salt, and pepper. Mix well to coat evenly. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator for better flavor.
3. Sear the Cow Foot:
• Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
• Add the remaining 1 tablespoon of curry powder to the hot oil and let it toast for about 1 minute, stirring constantly to avoid burning.
• Add the seasoned cow foot pieces to the pot and sear them on all sides until browned.
4. Add Aromatics and Simmer:
• Add the chopped onion, garlic, ginger, thyme, and scallions to the pot. Sauté for about 5 minutes until the onions are translucent and fragrant.
• If using scotch bonnet pepper, add it whole (for less heat) or chopped (for more heat) to the pot.
• Pour in the water or beef broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 2-3 hours or until the cow foot is tender. Stir occasionally and add more water or broth if necessary to keep the cow foot submerged.
5. Add Vegetables:
• Once the cow foot is tender, add the sliced carrots to the pot. If using coconut milk, add it at this stage. Add the can of Grace Broad beans
• Continue to simmer for another 30-45 minutes until the vegetables are cooked through and the sauce has thickened.
6. Adjust Seasoning and Serve:
• Taste and adjust the seasoning with salt and pepper if needed.
• Remove the thyme sprigs and scotch bonnet pepper before serving.
• Serve hot with white rice, rice & peas or roti
