MONDAY 11/11: Happy Veteran's Day to all those who served!
Marry me chicken is said to be so delicious you will receive a proposal if you make it. Last week I made sun dried tomatoes for the first time and I will be doing it again for this dish. Such a difference! Pan sautéed chicken topped with sun dried tomato and fresh basil and drenched in parmesan cream sauce over penne pasta with broccoli.

TUESDAY 11/12: My biggest seller is back -- Super tender chuck roast in savory pepperoncini gravy over buttermilk mashed potatoes with green beans. Get your order in early before I sell out.

WEDNESDAY 11/13: Picodillo stuffed empanadas - Seasoned ground beef & potatoes stuffed in flaky pastry discs and fried golden brown served with creamy salsa verde with refried black beans and tres leches for dessert.

THURSDAY 11/14: Smothered pork chop-scalloped potato casserole. Cheesy scalloped potatoes topped with pan fried pork chops layered with more scalloped potatoes & topped with cheese. Served with bacon braised green cabbage.

FRIDAY 11/15: Chicken stuffed puff pastry braid baked golden brown with savory cheese sauce served with rice pilaf and pan fried corn.

Order one day or order every day - the choice is yours. Dinners are served hot and ready to eat 5-6:00 pm daily at The Cove on Hamblen (1101 Hamblen Road). Come early to enjoy a cold craft beer or glass of wine or enjoy stay to eat your meal inside or on the covered patio. Need curbside service? Just text when you arrive and I will deliver to your car.

Tonight’s dinner features my favorite soup: ChippewaFalls chicken & wild rice soup from Famous Dave’s cookbook in Hayward, Wisconsin. It takes forever to make with a million ingredients but it’s so worth it. Served with a honey crisp apple salad with apple cider vinegar dressing, candied pecans, bleu cheese and dried cranberries. Greek lasagna (Pastitsio) is on the menu for Wednesday night. The bottom layer is penne pasta mixed with Feta cheese. The pasta is topped with a layer of thick bolognese type tomato meat sauce seasoned with cinnamon and cloves. Next it is topped with a cheesy bechemel sauce thickened with egg yolks sprinkled with Parmesan.

MONDAY 10/28: Red beans & rice is traditionally served on Mondays in Louisiana with Sunday's leftover ham bone. The dish could cook slowly on the stove as Monday was traditionally washday. A pot could sit on the stove all day as women were busy scrubbing clothes. So now you know... My red beans & rice is made with Andouille sausage and served over white rice with scratch made buttermilk biscuits my daughter, Gracie, taught me how to make. I hope I make them s good as her!

TUESDAY 10/29: Buttermilk marinated bone in fried chicken served with loaded baked potato salad and pan fried corn. Chicken breasts, thighs and legs.

WEDNESDAY 10/30: Pastitsio is Greece's answer to Italy's lasagna. I have wanted to make this recipe for a long time. Penne pasta tossed with feta cheese, layered with a Super thick rich tomato meat sauce flavored with cinnamon and cloves for an authentic Greek flavor and topped with a thick béchamel sauce and topped with parmesan cheese. This really looks amazing.

THURSDAY: Happy Halloween! I am really hoping the rain stays away so I can be the cotton candy lady again this year. Last year I had 250 cones and ran out!! I have stocked up this year. :)

FRIDAY 11/1: Can you believe it's November already?? This is my favorite soup ever. I just ordered 3 pounds of wild rice from Minnesota to make this Chippewa Falls chicken & wild rice soup. It is so very good!! Served with a honey crisp apple salad with candied pecans, dried cranberries, bleu cheese and apple cider vinaigrette.
