Normally I take off MLK day to recover from the half marathon and many people have off work now so they don’t need me to cook for them. This year looks a little different…. I know I just had chicken & dumplings a couple of weeks ago but if I made it on Monday who would order it? Pretty much hunkering down on Tuesday and not sure when the roads will be drivable on Wednesday so that day will be a wait and see kind of day.
Let me know if you would get chicken & dumplings. If I get enough takers I’ll do it. Thanks & wish me luck tomorrow!!!

MONDAY 1/13: My hubby found this recipe for me and it sounds delicious! All the goodness of a Philly cheesesteak in a pasta dish... peppers, onions, sautéed mushrooms, cheese tortellini and tender beef slices all covered in a creamy provolone sauce. Sounds pretty good to me.

TUESDAY 1/14: Grilled spice rubbed pork tenderloin served with an avocado garlic herb sauce on the side with crispy ranch red potatoes and Mexican street corn salad.

WEDNESDAY 1/15: Grilled Chimichurri marinated boneless chicken thighs served with cous cous salad with fresh tomatoes and feta cheese tossed with some of the chimichurri sauce.

THURSDAY 1/16: This is copycat recipe from Cheesecake Factory - Chipotle chicken pasta. Tender chicken, smoky chipotle seasoning, and a creamy sauce with a hint of lime with cilantro and roasted corn tossed with penne.

Happy New Year!!
I hope everyone enjoyed the holidays as much as I did. My plan was to prepare the famous “magic fat burning cabbage soup” this week but with this cold snap descending on us I thought we could all use something a little more “stick to your ribs” so I decided on green chili chicken enchilada soup. All the goodness of my chicken enchiladas made into a soup. Only $15/quart.

MONDAY 1/6: Perfect for this chilly weather - traditional chicken & dumplings made with drop dumplings (like my mom used to make), celery, carrots & onions.

TUESDAY 1/7: Mississippi pot roast with plenty of savory gravy with creamy buttermilk mashed potatoes and green beans. This usually sells out so get your order in early.

WEDNESDAY 1/8: Parmesan & Panko crusted chicken breasts with lemon cream sauce on the side served with rice pilaf and broccoli.

THURSDAY 1/9: Super tender jumbo ricotta meatballs over angel hair pasta with scratch made marinara.

FRIDAY 1/10: We visited New Braunfels for our anniversary on New Years and went to the Alpine Haus. I had their chicken cordon bleu schnitzel and it was so good I am recreating it for you. Breaded chicken cutlets pan fried golden brown then topped with black forest ham and Gruyere cheese served with beer & bacon braised red cabbage and spaetzle (German dumplings).

I am back from Mexico and ready to cook some yummy dinners for you this week. I still have take and bake breakfast casseroles available to order as well as Christmas Eve/Christmas Dinners available. I also have gift certificates available - perfect for teacher gifts!

Soup of the week is Cabbage Roll Soup. All the goodness of stuffed cabbage rolls in a soup. Only $15 per quart. Available every day until I run out.

MONDAY 12/16: Grilled brown sugar & spice rubbed pork tenderloin served with jalapeno-cilantro chimichurri sauce on the side, crispy smashed potatoes and honey-roasted carrots.

TUESDAY 12/17: Parmesan garlic bacon cheeseburger lasagna:
Crispy bits of bacon, paired with melty layers of mozzarella cheese, perfectly complement the tangy marinara and creamy ranch sauce. A garlic-infused ground beef mixture provides the robust foundation that ties everything together. YUMM!!!

WEDNESDAY 12/18: Cordon bleu stuffed shells with garlic bread. Chicken, ham & bacon mixed with Swiss cheese and cream cheese and stuffed in jumbo pasta shells topped with cheese sauce and mozzarella.

THURSDAY 12/19: Parmesan crusted chicken breast with dijon cream sauce, scolloped potatoes and broccoli.
