Made this “Royal” Mardi Gras board for some sweet ladies night last night before their ball! Hit me up if you need some treats, before your next MG Ball!!

Made these delicious sweet potatoe bites. Great by themselves or as a side!
Recipe:
Three sweet potatoes
Whipped feta or block feta/goat cheese
Cranberries/Raisins
Walnuts
Honey
Balsamic Glaze
Parsley

Preheat: 350’
Bake sweet potatoes and cut into rounds (about 5-7 per potato)
Place on buttered baking sheet

Topping:
Chopped walnuts
Chopped cranberries/raisins
Mix 1/2 cup balsamic glaze with 2 Tbls. Honey
Mix with whipped feta or goat cheese or grated feta

Top each potato round with mixture and slightly press into potato round!
Bake for 8-10 minutes until sizzling. Top with parsley and enjoy!

Serve immediately or Keep refrigerated! Take out a few at a time and air fry for 4-6 min! They freeze beautifully!
