Not my prettiest version but definitely one of my tastiest (Single Serving)
Ingredients
π2 eggs
π1/2 red bell pepper, chopped
π1/2 yellow bell pepper, chopped
π1 ripe red tomato, chopped
π1/4 c fresh parsley or cilantro
π3 cloves garlic, crushed
π1 tbl tomato paste
π1/4 tsp garlic powder
π1/4 tsp allspice
π1/4 tsp ground turmeric
π1/8 tsp ground cumin
π1/4 tsp paprika
π Extra Virgin Olive Oil
πSalt & Pepper
π1/2 small red onion, diced
π 1/4 c of hot or boiling water
Instructions
1. In a medium size sauce pan, heat up some olive oil and add onions, red and yellow peppers, garlic Until translucent in color or you can see that it is mostly cooked, but not entirely. οΏΌ
2. Now you can add all the spices including salt and pepper and adjust your olive oil level if needed. Add in your tomato paste and incorporate with your vegetables until it is thick. Add and your water now and allow the mixture to blend and sizzle for about one minute on medium heat.
3. With a rubber spatula or spoon, create a space for each egg. Put your eggs in a bowl to make it easier to four in each space in your pan. Add your fresh herb either parsley or cilantro. Cover and allow the eggs to cook for 2-3 min or until the whites are completely white and somewhat fluffy. Uncover and serve immediately with your favorite bread π₯. οΏΌ
