Billy and Jimmy hopped in our Explorer to go pick it up. After driving straight back on a cold December day, Billy couldn’t wait to start the first batch of ribs.
Rolling Smoke will be at Paulus Park in Lake Zurich this Wednesday, August 7th for their Food Truck Social. We will be serving Baby Back Ribs, Pulled Pork, Italian Sausage stuffed with Guardineira and Provolone, Jamaican Jerk Sausage, All Beef Hot Dogs, Fresh Cut Cole Slaw and Italian Pasta Salad. We had such a great time yesterday cooking at the American Legion. Rocco Bevilacqua and Rose DiCanio who organized the dinner are wonderful caring people. No wonder they had so many amazing friends and family who donated their time to help out. We are grateful to have been a part and hope to be back next year.

So it begins. We are doing a Thanksgiving Dinner at the American Legion Hall in Franklin Park tomorrow for around 250 people. We'll be posting pictures of our progress and the finished products today and tomorrow. Of course we have to start with the 15 turkeys.
