Hello Everyone,
It’s been a while since we’ve posted anything. We’ve been busy with gardening, maintaining the property, running the kids all over the place and trying to figure out our direction. As everyone knows cost have been crazy and that put us way over budget on the building, then commercial kitchen equipment quadrupled in price (hasn’t fully recovered yet), then there’s all the other hoops that have to be jumped through. Needless to say this priced us out of what we were trying to do. Now we are working on moving another direction but it’s still very early in the planning process and we haven’t put together a clear path on how to make it all happen. We will keep y’all updated as we figure it out and make progress. Expect to see more food pics and recipe videos as we move forward.

We’re really pleased with this dough recipe. Buns, rolls, hoagies, pizza crust. It’s working great for everything we want to use it for. Maybe one day soon y’all will get to enjoy it all as well. Until then you can enjoy with your eyes. Smoke grilled cheeseburgers with carrot and sweet potato chips.

Leftover rice, leftover bbq ribs, leftover grilled vegetables. What do y’all do?

I chopped the rib meat, marinated it with Thai seasoning and fresh orange juice, added it to a skillet with heated sesame oil, slowly cooked it until it became rendered of the fat and crispy. Drained the oil, added ponzu, soy sauce, orange juice, seasoned rice vinegar and simmered until thickened added a spoon of butter tossed the meat in it and placed to the side.
I chopped the vegetables and added to the pan with heated sesame oil and garlic chili paste, sautéed until heated through. Removed from pan.

I added the rice to the pan with heated sesame oil on high heat tossed until heated through. Added a couple spoons of butter, sprinkled with onion powder, and added soy sauce. Then tossed until thoroughly coated with soy and butter has fully melted. Created a hole in the middle, poured in scrambled eggs, allowed to cook while gently stirring only the egg and gradually mixed into the rice.

Turn the heat up, stir in the veggie mixture. Add to plate then top with meat, cilantro and chopped peanuts.

Slice jalapeño and Sriracha is always a nice addition.

Smoke roasted, marinated onion stuffed pork loin, with fire roasted acorn squash, butternut squash, carrot, sweet potato, and fresh herbs. Not featured is a cassava and tiger nut flour bread.
