They get tired of rice & beans or anything that has to do with rice. So, we provide other options and this one right here, they seriously can’t get enough of. A simple meal of chicken & waffles always does the trick.

Had her try some of my vegan chicken from earlier. She gets mad when she learns its a mushroom so, this time…. I didn’t put mushrooms to the test.

Making the ground “meat” for our vegan empanadas. You know sometimes we just need our quick and simple comfort foods.

We’ve been debating back and forth at the table about what it is she is eating… we are transitioning to a vegan diet. So, I’ve been finding ways for them to enjoy their food without feeling like they are missing out. She is convinced that I am lying about her burger being vegan but, #beyondburger for the win!
