I’m a bit off my cooking game haven’t had much of an appetite and a lot going on that take out has just been easier and better. Or the occasional boyfriend making a meal after his long days of work.
Today finally got a little sprinkle of energy and motivation to cook for the family. Nothing crazy just a simple meal, I’m proud of because I actually enjoyed my cooking tonight. If I could tell you the roller coaster of cooking things and just not wanting to eat you’d understand but well save that for another day.
Tonight I’m proud of the simplicity.
Hawaiian BBQ chicken with grilled asparagus and broccoli cheddar pasta made by my little guys help in stirring the pot.

I’ve made these once before but perfected them this time around. Super simple dinner.
🥓 🍗 🥒 Maple Bacon Dill Chicken Sandwich with Maple Carrots.🥕
🐔 When I get my load of chicken breast, I always trim down the breast and have some left in pieces, this makes for the easy dinner.
🍽️ This reciepe got a splash of dill pickle juice, dried dill, sautéed peppers and onions, garlic, and salt and pepper of course. Add one egg and mix together.
🥣 Then you’ll start adding your flour. I do about 1/3 C at a time and mix well. This took about 1C total.
You just want to be able to form the chicken into patties. It will be extremely sticky, so get a nice portion plop it in the oiled pan and flatten it out into a nice patty.
👩🏼‍🍳 Once these are browned on both sides I then finish in my air fryer for about 7-10 minutes or until cooked to 165 internally. Air fryer is fantastic for crisping up and draining extra oil.
🍁 Place on your bun with some lettuce and mayo and drizzle with Maple syrup.
The little dude enjoys it too. Basically chicken nuggets in a patty.

Had a little help today from my little man. Gotta let him help every now and again. ❤️
🥜 Thai peanut grilled chicken over rice with some broccoli.
🥦 All done on the grill, threw the cast iron on there to cook the broccoli and onions.
🍋‍🟩 Thai peanut sauce doctored up a bit for what I have in the fridge, but always gotta give my old time job Catered Creations, Inc. out of Grand Rapids the credit for the memorized recipe.
Easy peasy and yummy 🤤

Pictures don’t do it justice. Plus I always forget to take pictures 🙂
I was out of cilantro so I couldn’t add the extra color to make it prettier.
This is a version on Mexican style corn 🌽 but with chicken.
Throw a cast iron on the grill, get it all hot and bothered then add your seasoned chicken. Sauté and let the chicken brown up, then add some fresh onions and garlic.
After that cooks a bit, add your corn, in about two minutes add about 1 cup of chicken broth. Then get ready to add the good stuff.
Add sour cream, mayonnaise and cheese.
Mix in well allow the bubbling to take place. Once all incorporated and cheesy and creamy. Remove and bring inside.
Great additions would be some cilantro and paprika.
Serve over your favorite rice or pasta.

Simple, easy, quick, and all in one pan so the clean up is even easy. And I’m not lying when I tell you how good this was. Absolutely loved it 🥰

🐔 Made a creative new chicken sandwich
Came across this reel that gave me a great idea to this dinner.
This was super easy to make, very little mess and delicious. 🤤
🚫I was missing an ingredient so I had to improvise, I have not been taking proper inventory.
Added a few extras from items I purchased for my taco night that added that extra yumminess and made for a cheap meal.
I’m pretty stoked on how they turned out so I figured I’d share.
😋 This is just cubed up chicken breast. This would probably feed 4, but this man of mine takes a lot to upkeep 😉.
2 chicken breast cubed (medium size)
2 eggs
1/2 TBS paprika
2 tsp garlic powder
1 tsp kosher salt
1/2 tsp cracked black pepper
2tsp parsley
1tsp dill
Toss this mixture together well then add the flour.
Flour is going to bind mixture together so you can form those patties.
You’ll need about
1/4 c AP flour
But add more as needed. I improvised with part pancake mix because I apparently forgot I didn’t have enough flour.
1. In a large saute pan heat about 1/2 C vegetable oil so you can fry each patty.
2. Once oil is hot, spoon in chicken to size of your desire, allow to cook on medium high heat 2-4 minutes on each side or until golden.
3. Remove from oil place on a baking sheet with a baking rack so that the patty’s cab release oil without getting soggy.
3. Temp chicken patties to 165 degrees, top with a slice on cheese and place back in oven to melt over top.
4. Prepare your roll in the toaster (we used onion buns) spread mayo on one side and top with lettuce, add honey mustard to the bottom, slide patty on to bottom bun. Top the patty with a scoop of guacamole and sliced tomatoes.

❤️💜The man rated it with eating 3 whole sandwiches I decided not to ask his number, because he’s a turd and a picky eater.

Decided to do a taco night the other night.
This took some stress off of me making everyone’s tacos, to being able to sit at the table and make our own tacos.
Kids helped in setting up the board and even got a compliment from the little ones on how I make the dinners look prettier than daddies. I try most nights. Lol! 😆

Tonight’s dinner we had to get us some seafood.
I forgot the starch so double protein it is.
Lemon Dill Salmon
Garlic Butter Shrimp
And Garlic Parmesan Green Beans.
So so so yummy 🤤 it was a nice change up from our usuals.

Last nights dinner involved leftovers with a side of something new.
Mom and dad shipped us some potato soup so I just made it look pretty.
Thawed some previously made bbq pork and warmed it up. Served with fresh garlic bread on Texas toast, and a new slaw I made up in my brain while showering.
Broccoli and Roasted Corn Slaw turned out pretty darn good if you ask me 😍☺️ new addition to my recipe book.

Fruit tray for a house warming party. Kids liked it so much they want us to throw a party now.
With the seasons changing the fresh ripen fruits have changed so we swapped in a few different fruit including papaya, dragon fruit and tangerines.
Love the pop of colors 🥰😍

The boo thang, messed up our cinnamon rolls this morning.
Set the temperature too high and when I started smelling burning 🔥 I realized we weren’t eating those cinnamon rolls.
👩🏼‍🍳 So stepped in and saved the day.
🔥 We cut off the burnt parts (top and bottom) 🍓 🍳 chopped up the cinnamon rolls and tossed it in an egg batter (basically French toast batter) added in some fresh strawberries baked at 400 for about 10-15 minutes, then topped with the icing that came with the cinnamon rolls.

10/10 nice ooey, gooey cinnamon roll casserole and the strawberries were a great touch.
And I wasted cinnamon rolls 🙌🏼👐🏻🫶🏼
