Homemade Almond Milk:
FOR PLAIN ALMOND MILK:
* 2 1/2 c. almonds
* 6-8c. filtered water ( depending on your taste)
* Healthy Pinch of salt
FOR SWEETENED ALMOND MILK:
* 2 1/2 c. almonds
* 6-8c. filtered water
* 4 medium pitted dates (or 4 tbsp of date syrup, honey, agave, or maple syrup)
* 1 1/2 tsp. vanilla extract
* 1/2 tsp. salt
-In a bowl or container soak almonds covered 6-12hrs (depending on strength of your blender + the longer they soak the creamier they will be)
-Strain the soaking liquid and give the almonds an extra rinse. They should be about double in size. Add the almonds, 6 cups of the water, and desired flavorings to a blender or food processor and blend for 1-2 minutes or until almonds are broken down and liquid is frothy and creamy. Add water gradually to adjust to your flavor levels. (If your blender or processor is not large enough to hold all of the water, you can add water post straining!)
-Using a nut milk bag or a cheese cloth, strain the almond pulp from the almond milk. Be sure to squeeze out as much as possible. Store in the refrigerator in an airtight container up to 4-5 days & shake well!
