Strawberry Tartlets from The Savoy

Normally, fruit tartlets are made with sweet shortcrust. Most hotel afternoon tea menus include two or three different tartlets, all made in the some sweet pastry cases. This can be quite heavy and filling, so some years ago the chefs decided to lighten things up a litle and make a change. These strawberry tartlets are made with filo pastry. Their very different texture and taste makes an excellent contrast to all the other tartlets. Traditionalists can just replace the filo with sweet shortcrust.

MAKES 4
3 sheets of filo pasty
4 tsp unsalted (sweet) butfer, melted
40g/2oz/ 1/2 cup icing (confectioners] sugar
6 quantity Frangipane (see page 187)
2 tsp creme de framboise liqueur (optional)
4 tbsp Pastry Cream (see page 185) or whipped cream
14 medium strawberries, hulled
4 tbsp strawberry jam (jelly), warmed and sieved, for glazing a few skinned and chopped pistachio nuts, to decorate.

Heat the oven to 200°C/400°F/Gas Mark 6. Brush 1 sheet of filo postry with the melted butter and dust with sugar. Lay another sheet on top and brush and dust with more butter and sugar, then odd the final sheet and brush and dust again. Cut out four 10cm/4in rounds and use them to line four 7.5cm/2 3/4 in tartlet tins (muffin pans). Divide the frangipane among the pastry cases (shells) and bake for about 20 minutes until golden. Leave to cool.
If you are using it, stir the framboise liqueur into the pastry cream or whipped cream and pile it into the centre of each tartlet, keeping it away from the edges, or it will flow out when the fruit is pressed on. Cut the strawberries into 4 and arrange on top of the cream. Brush with strawberry jam (jelly) to glaze and sprinkle a few chopped pistachios on top.
