Collette Caters will make the simplest of menus look amazing!

Our client requested a continental breakfast...... We provided an assortment of fresh baked Breads, Muffins and Danishes. We added our new Bagel Bar, Assorted Fruit and Yogurt Parfaits to round out today’s breakfast. Our final touch was a Delicious Mimosa Bar with fresh seasonal cut up fruit.

Tuscan Bone-in Chicken Thighs:

- Pat chicken dry to remove all the moisture
- Rub it down with EVOO (Extra Virgin Olive Oil)
- Season with: Salt, Pepper, Onion Powder, Garlic Powder, Italian Seasoning, Red Pepper Chili Flakes and Smoked Paprika

Let Marinate in refrigerator for a minimum of 30 minutes (The longer the better)

Bring your skillet of EVOO up to medium high temp and add your thighs flesh down first for 6 - 7 minutes until you get a nice sear on the skin. Flip and do the same to the other side of your Thigh.

Next pull your chicken and leave out while you create your sauce:

***** Do NOT wash your pan, that’s all the flavor in the brown bits at the bottom of the pan *****

To the same pan you cooked your chicken in, add about 3 tablespoons of Kerigold garlic butter and add diced shallots Sundried tomatoes and some of the Sundried tomato oil to the skillet. Cook down for a few minutes and then add fresh garlic and some flour to start a roux. Stir until you breakdown all that raw flour. Once that’s done, deglaze your pan with white wine. Whisk until smooth. Next add Heavy Whipping cream and whisk. I then added everything we seasoned the chicken with (minus the salt). Next add a little more of the Sundried tomato oil, Parmesan cheese and fresh baby spinach (do not use frozen spinach).

Next nestle the chicken into the pan of sauce, spoon some over each thigh and place in the oven un covered on 350 for 30 minutes or until chicken reaches temp.

Garnish with Fresh Parsley and serve…
