Roasting Pigs in the cold on Christmas Eve, temperature was 6F with 40 mph wind gusts. The challenge was when to start roasting to meet the pick up time.

Got up at 1:30am on Saturday morning (12/24) to start the roasting process, I needed to start 5 pigs + 1 grill of chicken. We needed 2 to be done by 11am, one by 11:30am, 1 by 1:30pm and the last one by 3pm.

We did 2 with our new Puerto Rico style rub which came out extremely well. This will be added to our product line for 2023.

December 14th we roasted a medium size whitetail deer, marinated with our rub also used for Lamb and our Greek goat rub.

Marinated for a week and slow-roasted in our new Rotisserie Roaster. The meat was soft and juicy, including the backstrap and loins, with NO gamey taste!

The key to roasting deer, lamb or goat is slow with an indirect heat source.
