~ Mmmm-mentors ~
My Great-Grandma Parker was an humble lady who fed an army out of her meager kitchen. I was quite young when she was still cooking, but breakfast from her table is still the kind I crave. Her daughters, including my Grandma Ginny, were all fine cooks who were intent on making us ALL fat. As Grandma Parker often would say, “I eat TO KEEP FROM getting hungry!
Ok. My Mama, y’all! My parents married pretty young and Dad wasn’t about to give up home cooking. So Pop put my mother through cooking school in Grandma Betty Staley’s kitchen! Biscuits, dumplins, gravy, sausage, meatloaf, everything… the whole way! My Dad was no dummy! And Mom, as a result, could bring it!
I grew up on daily meals for which folks now pay handsomely in country inns and restaurants. Perhaps I wasn’t the only lucky soul to enjoy such an upbringing.
However…
I ALSO had Josephine Keegan across the street! The Keegans opened my mind to variety and culture. Jo, 100% Italian, loved treating us to her Italian dishes and desserts! Food was shown to me as a way of sharing love. Josephine was and still is amazing!
Eileen Frerking, MiMi to my kids, was my next influence. That lady could cook anything! And well! She prepared fantastic holiday meals and made it look so easy! I never left a “skrid” on my plate!
During the mid-2000’s, Hurricane Katrina carried me to Louisiana for an all-combined year of my life. My time there was highlighted by shrimp po-boys, red beans and rice, gator sauce piquant, etouffee, crawfish, and jambalaya! Ooooweee pahdnuh! Every weekend was a spectacular experience. Before I left for home, I convinced Jose Newman to share a few recipes and Daniel LaBorde to teach me how to make a really good jambalaya. I’ve been putting my lessons to good use ever since. Laissez les bons temps rouler!
Which brings me to Beth. Carmela Beth Butner is, without a doubt, the most profound influence and mentor in my cooking/catering journey. Beth insisted that some of the best recipes aren’t written down and revealed a few sneaky secrets of scrumptiousness. As long as I live, I’ll never, on my best day, cook as crazy good as Beth…I have tried! Equal to her talent in the kitchen is/was her inviting personality with customers. She’s a complete unicorn and my culinary hero!
