November 3rd - We're back with Food Truck Mondays!!

Come on by our parking lot, here at the Polk County Chamber of Commerce Livingston, TX Office.

🌅The morning vendors will begin at 7am with breakfast and morning drink options. The others will roll in ready to serve lunch, snacks, dinner, desserts, and more!
We have dates scheduled through January 2026, please swing by to ensure success and to keep our vendors wanting to come back! See flyer for dates.

1st Monday of each month.

Dont forget.....we will be set up at Wolf Creek Car Show this weekend!!! Y'all come out and see some beautiful rides and get you some food! There will be all kinds of vendors and fun things to do and a band in the evenings....see y'all there, we will have Jumbo BBQ Baked Potatoes, Chopped Beef Sandwiches, Chicken Salad Croissants, Sausage Wraps and HomemadeBanana Pudding!!!

Brunch from this past weekend....we get so busy trying to make sure we are doing everything we can to take care of our bride and groom for brunch and prepping for a great dinner on their big day....I always forget to post pics!

Yesterday was crazy busy!!! We were up before the chickens prepping all the fresh fruit, veggies, fresh baked cookies and breakfast tacos for our beautiful bride and groom to have brunch at Fountain View Farm - Wedding Venue while they were getting ready, then we did the whole divide and conquer.....lol I took my son and one of our granddaughters to an early wedding, 175 ppl Brisket, Chicken, Baked Beans and Green Beans was our brides choice and a huge hit with everyone!!! Then my husband, daughter-in-law and our other granddaughter did the later wedding of 230 ppl Brisket, Chicken, Ranch Beans with Brisket trimmings and homemade Mac-n-Cheese for the win!!!
I love when all our guests are so happy with their meal and come back to let us know how we did and ask for our info....it truly warms my heart and makes what we do worth it all!!!

We are open today 10:30 to 3:00 (closing early for a special event this afternoon)!!
Set up at Eastex Outlet Center on 190 west

Today we have BBQ Sandwiches (your choice of Chopped Beef or Pulled Pork)

Wraps (your choice of Ham, Turkey or Chicken)

Y'all come get your loaded bbq potatoes before they are all gone it's 11:30 and we have already been super busy, have it done your way....Chopped Beef or pulled pork, top it off with crispy fried onions or jalapeños, come on by and let us know what you want!!!! See y'all soon!!!
We are at Eastex Outlet Center on 190 west. Open from 11:00 to 4:00

We are back!!!!
Roll'en Thunder BBQ food truck will be open this week, Tuesday through Thursday 11:00 am to 4:00 pm at Eastex Outlet Center on 190 west.
We will have BBQ Loaded Baked Potatoes and Sandwiches....your choice of Chopped Beef or Pulled Pork and of corse our homemade Banana Pudding!!!!
