SAVE AND SHARE TO AMP UP YOUR GRAIN DISHES! Buckwheat is such an underrated grain. Unlike rice that gets its seat in so many cuisines, buckwheat and its nutty flavor is often forgotten - sadly! It’s chock full of vitamins, minerals, tons of fiber and double the protein than oatmeal! Want to make savory buckwheat like this? Grab your shopping list! Ingredients: 1 cup buckwheat groats, 2 cups water, 1 red onion, 1 yellow onion, 1/2 lb bacon, 1/3 cup olive oil, 1 lemon (or lime if you ran out like I did),Salt & pepper to taste, LOTS of dill Instructions: Place your buckwheat groats in a pan, top with water and add salt. Cover, bring to a boil, then reduce heat and simmer until water is gone. Roughly 15-20 minutes. (Alternatively you can soak them overnight in water and cook quickly in the AM). In the meantime, slice up your purple onion very thinly, add to a bowl. Top with chopped dill, salt and pepper, the olive oil & juice of lemon. Mix everything together and let marinate while you prepare the rest of the dish. Chop your yellow onion and bacon & sauté until everything gets a nice caramelized color. Time to plate - buckwheat, followed by the bacon and onion mixture, topped with the marinated onions. If you want to one up your recipe drizzle a bit of hot honey (as in spicy) on top.
