The smoker’s out, the sun is shining, and BBQ season is officially ON! Matty Smokes BBQ & Catering is just warming up.
There’s nothing like that first fire-up of the year. As the nice weather starts to roll in, that familiar excitement kicks in, it's BBQ season. Time to dust off the smoker, clean up the grates, and get all the gear back in action. It’s a ritual I look forward to every year.
BBQ has become so much more than a weekend hobby. For me, it’s a job, a lifestyle, a passion, a creative outlet, and honestly, a never-ending learning experience. There’s something special about the process, something almost meditative in the way it all comes together.
Every decision matters. From how you trim the meat to whether you go with a dry rub or marinade, each choice shapes the flavor. Then there’s the smoker, temperature, wood type, and whether to wrap the meat or let it ride. Even choosing between foil and butcher paper can change the outcome.
The funny thing is, no matter how many times I do this, no two cooks are ever quite the same. Something always shifts. The weather, the cut, the technique. But that’s the beauty of BBQ. It’s not just about following a recipe, it’s about developing a feel for it. That kind of intuition only comes with time, patience, and plenty of smoke.
Here’s to another season of long cooks, bold flavors, and sharing what we love with the people around us. Let the smoke roll.
