Greek Pasta Salad
1 container of Tzatziki (we used Cedar’s)
1tbsp honey
1 c white vinegar
1 c olive oil
3 cloves of garlic, grated or minced
1/2 bunch of cilantro, torn
1 box (lb) of pasta of your choice (we used elbows), cooked
2 English cucumbers, small diced
4 scallions, sliced thin
2 red, 2 orange, 2 yellow, baby peppers, small diced
1/2 red onion, small diced
1 can of chick peas, drained and rinsed
In a large bowl, let’s make the vinaigrette first. Add whole container of tzatziki, honey, vinegar, olive oil, garlic and cilantro to the bowl and whisk together until it thins out. Add pasta, cucumbers, scallions, peppers, onion and chick peas. Use a large spoon to combine and coat all ingredients with the vinaigrette. If there is time, let sit for a little while on the counter or in the fridge before serving.

Roasted Cauliflower over Fire Roasted Peppers
Ingredients:
2 Fire Roasted Peppers (check out our reel from yesterday for the “how-to”)
Head of Cauliflower broken into pieces and blanched in salted water
4 cloves of garlic sliced thin
1/4 c parmesan cheese
Approximately 2 tablespoons of Italian parsley finely chopped
Olive Oil
Salt & pepper
Preheat oven to 400 degrees convection bake. In a small to medium size baking dish, drizzle some olive oil. Layer roasted peppers on the bottom of the pan. Drizzle some additional olive oil, add salt & pepper, sprinkle 1/2 of the garlic, 1/2 of the parmesan cheese and 1/2 the parsley on top of the peppers. Add the blanched cauliflower on top. Sprinkle with remaining garlic, parmesan and parsley. Drizzle additional olive oil over the top. Bake in preheated oven for approximately 10 minutes or until golden and bubbly.

Easy Cheesy Mexican Skillet Dip
Ingredients:
1 can corn (rinsed)
1 can black beans (rinsed)
1 can rotel mild tomatoes (drained)
6 links of spicy Primo chorizo (diced)
1 c cream cheese (room temperature)
1/4 c shredded manchego cheese
1/2 onion minced
4 cloves of garlic minced
2 1/2 cups of shredded cheddar (or mexican blend)
1/2 bunch cilantro chopped fine
4 scallions chopped
1 tsp Trader Joe's Elote Seasoning
1 tsp Trader Joe’s Chili Lime Seasoning
Preheat oven to 350 degrees bake convection. Add all ingredients to bowl EXCEPT reserve 1/2 of the scallions and 1/2 of the shredded cheddar. Combine. Transfer dip mixture to a cast iron skillet (or other oven safe pan). Top with remaining cheddar cheese. Bake in oven until the top is golden and bubbly and dip is warmed through (check after 15-20 minutes). Garnish with remaining scallions. Get out some chips for dipping and enjoy!

Tonight we’re making Lemon Garlic Salmon w/ homemade slaw on the side, all topped with some chimichurri sauce. It’s a light and easy Summer meal for a family of four! Check out the tutorial over on IG and TikTok!
Ingredients:
For salmon:
2 lbs salmon
½ stick butter
1 lemon
12 cloves garlic sliced thin
1 tbsp lemon pepper seasoning
1 shallot sliced thin
For slaw:
¼ cup mayo
¼ cup White vinegar
Bunch of cilantro
1 carrot shredded
1 cup red cabbage
¼ red onion
1 bell pepper thinly sliced
For chimichurri:
2 tbsp chopped cilantro
2 tbsp chopped parsley
2 tbsp of scallions chopped
1/4 c red wine vinegar
1/2 c olive oil
Salt and pepper
For salmon:
In a bowl juice lemon, add garlic, shallot and lemon pepper. Combine.
Put slices of butter on a sheet pan, put salmon on top, add marinade on top then top with additional butter, splash of olive oil and salt.
Fold up aluminum foil and cook on grill or in oven for 12 minutes or until salmon is cooked.
For slaw:
Whisk mayo, white vinegar, bunch of cilantro, salt & pepper in a bowl. Fold in red cabbage, carrot, red onion, peppers. Mix to combine
Serve salmon over cabbage.
For chimichurri:
Whisk together all ingredients. Add more red wine vinegar and/or olive oil to taste as needed. Spoon over salmon.
