VERY special 17 Lb brisket for my birthday get together tomorrow. Along with a couple smoked chickens and a pork butt! Using my proprietary whiskey tallow injection marinade and signature beef rub blend, this is truly next level smoking. Time to put her back in the fridge for an hour to relax and soak up that marinade before going to the smoker to be smoked with oak wood coals for 12-20 hours.

So very excited to announce that I have raised enough funds to purchase the commercial trailer smoker. She will be in my possession tomorrow morning. I didn't reach my entire goal yet (still have to get a hitch installed) but we do have a vehicle with a hitch so no worries currently. Leaving the fund raiser up and ongoing for that reason.

I am going to extend some promotions to gather up a following and to help spread the word. Twenty percent off any catering events (up to sixty people) starting today through the end of September. This will include one protein and two sides. Add additional sides and smoked meats for an additional 10 percent off.
Waiving all fees for onsite, full-service events for orders placed on or before August the 26th. This is HUGE (savings of upwards to three thousand dollars).

First "official" catering event completed, here's to many, many more! Clients ordered off my authentic Mexican grill menu and I received excellent feedback! Got another event to cater tomorrow, that signature smoked BBQ and then it's a clear rest of the week. Which means I need customers to occupy my time! As I find new and inventive ways to advertise, I will also lean heavily on my social media accounts to drum up business. I will be extending the 10 percent off all orders to gain a following.
