Who loves Abgoosht?! Soo good when it's cold π₯Ά
If you don't know it is a traditional Persian stew that is made with lambπ, beans π«, vegetablesπ₯π₯π§
π§, and a mixture of herbs and spicesπΏπΆοΈ. It is typically served with a side of thin, strained broth (called "ab" or "ab-e goosht") and is traditionally eaten with bread.
Here is our flavorful, traditional, country recipe. . .
Ingredients:
1 pound boneless lamb, cut into 1-inch cubes
1 cup dried white beans (such as navy or Great Northern beans), soaked in water for at least 8 hours or overnight
1 large onion, finely diced
1 large potato, peeled and cut into 1-inch cubes
1 large carrot, peeled and cut into 1-inch cubes
1 small turnip, peeled and cut into 1-inch cubes
1 small tomato, diced
1 small parsnip, peeled and cut into 1-inch cubes (optional)
1 small rutabaga, peeled and cut into 1-inch cubes (optional)
1/4 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
1. In a large pot, combine the lamb, soaked beans, onion, potato, carrot, turnip, tomato, parsnip (if using), rutabaga (if using), parsley, cilantro, minced garlic, turmeric, cumin, coriander, salt, and black pepper. Add enough water to cover the ingredients by about 1 inch.
2. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 hours, or until the lamb and beans are tender.
3. Using a slotted spoon, remove about half of the solid ingredients from the pot and transfer them to a blender or food processor. Process until smooth, then return the puree to the pot.
4. Bring the abgoosht to a boil and simmer for an additional 10-15 minutes, until the broth is thick and flavorful.
5. Serve it hot, with a side of the broth and some bread. Enjoy!
Abgoosht is a hearty and flavorful stew that is PERFECT for cold winter days. You can adjust the vegetables in the recipe to your taste, and feel free to add other herbs and spices if desired. Some people like to add a pinch of saffron or a sprinkle of sumac to the stew for extra flavor.
