On the menu tonight:
Barry’s Bitchin’ kitchen stuffed baked potatoes.
Ground sirloin steak
Minced bell peppers
2 cloves of minced garlic
Chopped spring onions
Diced jalapeños
My homemade seasoning™️
Cook together in a skillet until the meat is done and the veggies are soft. I don’t use beef or chicken stock, I use a can of beer.
Large Russet potatoes drizzled in olive oil and kosher salt, baked in the oven @400° until soft.
Cut off the tops and bottoms (for standing upright) and with a spoon carefully dig out the center. But leave plenty of the potatoes to hold together and restuffing.
Fill in the center with the meat mixture and a great cheese mix of a Mexican blend, pepper jack and mozzarella along with the potatoes you scooped out. Oh and believe it or not a raw egg for structure.
Place the tops and bottoms back on. (the cheese will hold them back on).
Wrap in foil and grill them on medium for 10 minutes.
Crack that bad boy open, add some sour cream, some ranch dressing, a bit more of the cheese mix, some minced cilantro...And then BOOYAH !!
