A pop up for a great cause. 11 courses paired with wine and cocktails for 24 special guest, led by "Real Men Wear Pink" & "Rainey Day Gourmet" to
present "A Perfect Pair," a chef's tasting menu at the Cypress Tap House for the American Cancer Society. Thanks to our RMWP Ambassadors, Michael Brolaski & Grant Cooley.

1st Course (bread): European grass feed butter board dressed in honey, confited garlic & oil, toasted pine nuts, maldon salt, fresh cracked black pepper, & edible flowers. Served with fresh baked "pink" frog rolls & pistolettes
2nd Course (appetizer): Brie cheese stuffed Madjool dates wrapped in candied bacon drizzled with blood orange & balsamic vinegar reduction
3rd Course (salad): Camprasse salad of heirloom tomatoes, fresh buffalo mozzarella, dressed with walnut & basil pesto
4th Course (cheese): Pasta shells stuffed with spinach sauteed in garlic oil & ricotta cheese blend, steamed in white wine cream, and served on a slate tile smeared with thick Alfredo sauce.
5th Course (soup): Grilled watermelon gazpacho (chilled) with heart of melon, mango salsa, & Mexican table cream
6th Course (1st main): Brazillian Moqueco of red snapper filet & gulf prawns
7th Course (palette cleanse): Mango sorbet
8th Course (2nd main): Smoked lollipop wings with West African jollof rice, Oaxacan mole Negro sauce, and Salvadorian table cream
9th Course (palette cleanse): Lemon-chello sorbet
10th Course (3rd main): Smoked lamb rib chop seasoned with Blackout Rub & served with creamy smoked gouda polenta, topped with minted chimichurri sauce
11th Course (dessert): Luxardo cherry & dark chocolate bread pudding (made with Jewish Chaulla bread & Irish brown bread) with Noah's Mill Bourbon custard sauce.

Sunday-Funday! Bloody Marys & wine with a simple Charcuterie spread. 😋👍
Used a little Rainey Day Gourmet, Cajun Blackening Spice and some Hellfire habanero bitters to prep up the Bloody Marys. 🔥😃

Such a fun party at a cool little venue, Tree Strands Place. Happy 50th to Mike Foster, and thank you to Shanda Foster for bringing us on for this fun event. Rainey Day Gourmet catered with smoked prime brisket central Texas style, and injected a pork leg full of fresh mojo sauce and slow smoked it as well. Served this up as a taco bar with choice of fresh made flour or corn tortillas hot from the steamer. Fire roasted fresh sweet corn on the cob, peppers, and spring onions to make a colorful corn relish. We offered up Cuban style back beans and our take on Spanish rice. As well as, crumbled queso fresca, fresh chopped cilantro, lime wedges, Porto Rican style mojo for the pork, and an Argentine green chimichurri to pair with the beef. 😋👍

Little late on this post but, we had a great St. Paddy's Day event at the cigar club with the boys of SBB. A good selection of whiskey and ci**rs to start the event. And some lovely chilled beers to go with a great lunch of pastrami smoked brisket, butter braised green cabbage, and candied baby carrots, with some of my Cowboy Candy and German Sweet & Hot Beer Mustard. 😋👍

Shrimp and Tasso over al dente bow tie in a light white wine cream sauce with baby portobello mushrooms. Paired with a nice chilled Chardonnay, Irish brown bread, and a lovely green salad with blue cheese.
