Behind the scenes at the other half of Stubborn Mule Catering wedding 3 years ago! Happy anniversary to Kris and Chris! Kris is instrumental on keeping the business side up to date, contracts, invoicing, banking (ya know the boring s**t I don't like!) Also for reeling back in when I come up with some of my "ideas' so grateful to her and her husband as he's also a huge help on the technical/grunt side he lifts the heavy s**t and keeps is organized he puts s**t back where it goes hahaha! Again though these first 3 years flew by so enjoy yourselves today!

Another amazing event! I'm still in awe of how this is all happening.
Tonight I got to do my 1st farm to table event on the actual farm!! I had an absolute blast grilling while watching the sunset.
Thanks to Krissy Fracek for the referral and to Badger Farms for being so amazing to work with.
Local grass fed beef from the farm to the left of them, local seasonal vegetables I got yesterday at the market. Now for a short nap as I'm doing breakfast and lunch on the farm as well!

3 lunches and 2 dinners for Trident Farm that is putting on a clinic with a multiple medal winning Olympian.
A wedding vow renewal for the inspirational couple Brad Schlaikowski and Nicholas James of Courage Milwaukee and then weekly meals on Sunday!

Being an overthinker is hard on many levels. I spent almost all of yesterday's therapy talking about not being sure if I went in the right direction going out on my own 100% then today I get this....perked me right up and gave me the confidence to keep going. Honestly it most likely took this person 3-5 minutes to shoot me this email but it made the last 3-5 rough weeks feel worth it! Thanks again to all for the continued support.

Stubborn Mule Catering is excited to cater a "high tea" baby shower in Cross Plains and then later go deliver nutritious box lunches to equine athletes who are participating in a clinic at Trident Farm in Cottage Grove. We enjoy doing many different types of events and styles of food.

With wedding season winding down we wanted to thank all of the couples who allowed us to share in their special day.
A fun side note is that Chef Ryan got married himself in August and insisted on catering his own wedding. (His bride to be allowed it with the stipulation that he was not allowed in the kitchen on the day of the wedding)

Last wedding of the season in the books! One of the best things about doing this business is the people we've met who want us to help them on their big day. Last night I catered the wedding of someone I've know for 15 years and was even part of the family for a hot minute. This catering business was kicked off by catering her sisters wedding 10+ years ago so it seems fitting to end this wedding season catering her very beautiful small and intimate wedding. Congratulations to the Qualleys!

Another event in the books! This one was extra special. What some of you may not know is that Chef Ryan has been in recovery from substance use disorder for the past 8 years and along with cheffing is also a certified peer support specialist helping others through their recovery journey.
Chef Ryan works for Safe Communities MDC as a recovery coach and was asked to cater the company picnic. He said it was fun to put together a diverse menu and even more fun to hear the adults going gaga over the peanut butter and jelly empenadas that were intended for the kids! He said it was such a great experience to see and even meet some newer co-workers in person instead of a zoom box! (He told me he even hugged a couple people...which we ALL know is a big deal!) Thanks again to Safe Communities and to everyone who made it out to the picnic.

Congratulations to our event coordinator Kristy Mortensen on tying the knot this past weekend. She got to be on the other side of the event for a change! It was an honor to create 2 very different menus for her. Rehearsal dinner was an authentic Taco bar with Carne Asada, Carnitas or Chicken in Adobo with traditional toppings; 4 types of salsa and rice and beans.
For wedding food they snacked on chorizo empanadas with Cilantro Lime Cremma. Bacon wrapped water chestnuts and a large Wisconsin Cheese and meat display.
For the main event she let me do my favorite and make Pork. Her and the groom chose pork tenderloin with a Cognac mushroom cream sauce, Wild Alaskan sockeye salmon with sundried tomato basil butter, Beef tenderloin, Garlicky green beans and smashed baby red potatoes.
It was different working with a new staff but they all did amazing and I will hire them all again in a heart beat.
May Kris and Chris have a wonderful 1st year of marriage and many more!

Well we did it and made it out to tell about it! 1st event since the Covid shut down and while not everything went as planned (it rarely does) we received nice compliments from the guests and the owners of the venue.
I'm already looking forward to the next wedding which is for our very own event coordinator!!! First up though an ice bath for my knees!

Just wanted to pop on to say that we are very excited as next week is our first official wedding sense 2019....(thanks Covid) I would be lying if I said I wasn't a bit nervous because I admire the client very much as she is also in the business. I hope that riding a bike sentiment also works with catering! Here's to a fun filled summer of weddings, rehearsal dinners, graduations, birthdays and backyard barbecues for the heck of it!
