250 guests calls for double pans on the line to keep the flow and not run out. This event was at a venue without a kitchen 😭 so the goal was to keep everything hot. We kept over flow food heating in a separate room. The only thing we ran out of momentarily, was lemonade 😩😩

Yesterday I was asked to create an
hors d’oeuvres table for a wedding reception. The first picture is where it started and 3 hours later this beauty was created. The client had an idea for me to execute, we collaborated on a menu and this was created. Since it’s south Louisiana we named it a “Cajun Table of Love” and contained boudin, hog head cheese, boudin balls, chicken crackling, corn-sausage-potato skewers, crawfish étouffée, assorted cheese, assorted crackers and grapes.
