Every day, our seasonally-inspired menu celebrates ingredients crafted with sustainable practices, from regenerative farming and permaculture to small-batch artisans and provisioners. This dish showcases the beet’s natural beauty while delivering a refined and flavorful experience, with it's natural sweetness and earthy flavor complemented by a horseradish crème fraîche and fresh veggie crisps that add richness and depth to the dish.

Our market garden team at Tabula Rasa Farms grows a variety of squash throughout the fall, and we are always looking to add them to our seasonal dishes in creative ways. Our current pasta dish features a squash stuffed agnolotti, drizzled in pumpkin seed pesto, and topped with roundbale cheese.
