Duck Brine Recipe, Savannah Restaurant, Naples FL, my first signature restaurant, Lowcountry, opened in 1994.
Apple Cider Brine
1 gal. Apple Cider (hard cider for longer brine time and reduce salt by half)
1/3 Cup Kosher Salt
1 tbls. Clove, whole, rough chopped
1tbls Apple Pie Spice Blend
1 tbls coriander, just crushed
2 tbls. Chopped Garlic
2 tbls. Rosemary, fresh
2 tble. Sage, Dried (fresh is good too, more)
1/3 cup Cider Vinegar

Bird or Pork
Marinade in Refrigerator for 1 to 5 days.

Place in a container that the brine can fully cover the bird or pork loin. Mix Brine so the salt has fully dissolved, add all ingredients and pour over the item to be brined, fully cover the item, use a plate to weigh the item down so it doesn’t float above the brine. Cook as usual.
