Biscuit challenge. Biscuits are placed in the smoker to see how evenly the smoker cooks. I’m really please with the results. Definitely a great idea for anyone that has a smoker to find hotspots in your smoker.

For those of you who don’t know me my name is Ray Stevens. I have been smoking meat for 10 years as a hobby for friends and family. I currently use an offset smoker that burns charcoal and wood. I use a combination of charcoal and cherry, maple, or oak firewood. This is the most difficult smoker to use but it produces the best results. I hope that this summer you will come to Chartwell Swim Club in Marlton, NJ and try my food and love it!!
