This stunning Trinidadian dish is traditionally served with dumplings; however, I add my personal touches by serving the dish with fingerling potatoes instead. In order to balance the dish, Callaloo - an indigenous leaf vegetable, traditionally either amaranth, taro leaves, or Xanthosoma leaves- was added to balance out the meal between starches and a thick sauce.

Anyone that knows me knows that I'm passionate about what I do! So, when asked where I see myself in 5 years, I only had one answer: Building my business to have a catering hall of my own and to work with organizations and people from all over. Some might say it's a big dream, but I believe if people understood the delicacy that is Caribbean food that there would be an explosion of new recipes in The Culinary world. I'm trying to introduce A New Concept that isn't commonly seen outside of a family member's house then adding the luxury, taste, and Aesthetics people have grown to expect. I do have one or two lessons that stood out to me in particular. I had waiters that were supposed to come to an event, and they didn’t show up. I was scrambling to find other people while 1 million different little things popped up. In this instance I had to improvise and use my nieces and daughter as wait staff. Of course, this was difficult for them because they were not used to being waiters, they weren’t a custom to that, but I was lucky to have family support and a time that I needed to improvise.

I have one or two lessons that stood out to me where I had waiters that were supposed to come to an event and they didn't show up. I had to scramble to find other people as a bunch of little different little things came up. Stuff that I had to learn how to work through. In that instance, I had to improvise and use my nieces and my daughter. I'm not going to lie it was a bit difficult for them because they were not used to being waiters, they weren't accustomed to that, but I had to improvise.

I have had had waiters that were supposed to come to an event and they didn't show up and I had to scramble to find other people like different little things like that were. The small things always come when you least expect it. In this instance, I had used my nieces and my daughter. My grandmother was this graceful woman that had survived so many hardships. A woman who was suddenly struck by the war in Haiti and forced her away from everything in her life. A woman that never learned to read and write but worked as a candy merchant, and later a fabric merchant to survive. Tuesday, July 7, has been designated Blackout Day, a call to action and “day of solidarity in America where not one Black person in America spends a dollar" outside of businesses owned by Black people,”.

The initiative comes in the wake of protests against police brutality and renewed attention to the nation's decades-long racial wealth gap. As society has awakened to unfairness plaguing Black people in America, Black-owned businesses are getting showered with support in a loosely connected push for social and economic justice.

Another garden to plate adventure, today I’ve prepared stuffed pecorino peppers. Stuffed them with hot sausage, day old bread, lots of basil, sautéed onion celery & carrots, smashed tomatoes and garlic.

Finally able to eat from the garden 🤤sweet peppers, left over bbq chicken, purple cabbage salad with a spicy peanut butter dressing😋. If you know anything about me I’m of Haitian decent and my culture has a big influence in my cooking. So today I used Haitian peanut butter, olive oil, ginger, sesame oil, soy sauce, garlic, honey to prepare this dressing. @ Westbury, New York
