A lot of people do not agree with DariusCooks methods and choose to disagree because he's "controversial". As a chef and consultant, I agree with this post 100%. We have to operate at a standard and stop with subpar service and mediocrity. A little goes a long way, it's less expensive and more impressive to do things the correct way the first time. I watched for many years the industry that I love dearly and have invested 20 years of my life steadily declining. It's not an embarrassment to ask for help it's the smartest thing you can do for your business. I am not an advocate for culinary school, because some of the greats never attended. However, I do advocate that it's your responsibility as a food entrepreneur to educate yourself, perfect your craft, find a mentor, or hire a consultant. Being a good or great cook is not the only requirement when operating a food business, help is needed, no it's required; because if all you know is what you taught yourself that's all you know. If it isn't feasible to hire a consultant at this time at least perform a SWOT analysis on your business, learn and understand your food cost, create systems, create precise recipes, cross-utilize products, and streamline your menu. The majority of the things I've mentioned can be done with your food supplier. Sysco for instance has tools that will assist with food cost and inventory.

One question I'm asked most is when will I open a restaurant? The answer is probably never. The state of the hospitality industry is in such disarray; I rather not take on that stress again.

Since covid so many have chosen to become entrepreneurs, therefore leaving the hiring pool slim.
I am constantly being contacted by chef friends across the states asking if I have a recommendation for various positions on a weekly basis.

I currently travel to fix issues in restaurants, help inspiring entrepreneurs open new concepts, develop menu and recipes for new and existing concepts. I have the freedom to choose my own schedule and work on my terms while seeing the world for free.

I enjoy what I do, because I'm able to travel to do what I ultimately love; helping others. Every 3 months I can be in a different state or country if I choose. It's an honored to be a resource to so many.

We often play these games on fb and sometimes they are dead on.. This one resonated in my spirt this morning. I am an extremely private person and rarely ever transparent with anyone; most definitely not social media. I have had an amazing career as a chef; from cooking for my community (my greatest accomplishment), traveling to cook for celebrities, becoming the first African American Executive Chef of Oxford, traveling to help businesses succeed etc.

I accomplished all of this and it was never my dream. I received a degree from LSU with the intent of working for the FBI. Cooking wasn't my dream, but it was my calling. I've learned that my life isn't my own, I'm here to serve people, but I never thought I was ENOUGH. I was told that I wasn't ENOUGH. I wasn't slim ENOUGH. I wasn't man ENOUGH. I wasn't white ENOUGH. I didn't speak eloquently ENOUGH. Because, of not being ENOUGH, I haven't reached my highest peak.

After nearly dying 5 months ago, I've finally learned that I was ENOUGH. When I let go of of fear, and self doubt I became ENOUGH. I found my voice and realized who I truly am. I am Chef Keiona Jackson, and I am ENOUGH. I am getting ready to take this world by storm, because it is my oyster.

She's back!!! It's been a long road, but in the process I learned to get out of the way. Sometimes we're our own worst enemy. Over thinking was my Kryptonite.

While I was down I worked on new business ideas, implemented better policies, and fixed what was wrong with the current business.

As I walk away from rehab; I walk into my destiny. I stated that I was retiring Chef Kei next year, (no longer available to the general public) done! FFC is my new passport, I'm paid to travel and do what I love; serve people and fix restaurants. Baby Robert Irvine ain't got nothing on me. 🤷‍♀️well he does have 10,000 to remodel the restaurant. 🙄
