I am OVER this heat. I'm enjoying my patio now but I'm already in fall mode. I'm on the look out for a fire pit to add to the patio so that we can enjoy it a little longer into the year.

I romanticize everything so being snuggled up with a throw and a warm, apple cider in the crisp, fall air is my favorite way to end the day! Add the smell of a fire to that and I am in heaven!

This Monday, I worked from sunup to sundown. Eventually my daughter hit me with the “What are we eating for dinner?” text. I was 🤏🏾 close to telling her to order a pizza, but I remembered that I had these meatballs in the freezer, so we pulled these out instead.

Meals like these are a lifesaver when life gets extra busy! All I had to do was heat them up and add something simple like pasta.

With my husband and the kids heading back to school, I’m going to be pulling out these type of meals more and more. Save this recipe for later!

What are your go-to dishes during the school year?

INGREDIENTS
2 pounds ground chicken 96% lean or ground turkey
1 cup whole-milk ricotta cheese
1 egg
1 cup panko breadcrumbs
1/2 cup grated parmesan cheese
2 tablespoons olive oil
1 tablespoon minced garlic
1 1/2 teaspoons kosher salt
1/2 teaspoon pepper
1 teaspoon dried Italian seasoning
1 tablespoon chopped parsley
Cubed mozzarella cheese
Cooking Spray
***Jarred Marinara Sauce
***Spaghetti Noodles

DIRECTIONS

Preheat oven to 400 degrees F. Line a sheet pan with foil, and coat the foil with cooking spray.

In a large bowl, combine the ground chicken, ricotta cheese, egg, breadcrumbs, parmesan cheese, olive oil, garlic, salt, pepper and Italian seasoning. Mix until thoroughly combined. Scoop and roll 1-inch sized meatballs. Press one cube of mozzarella into the center and seal the meat mixture around the cheese. Place the meatballs in a single layer on the baking pan. Bake for 20 minutes, or until meatballs are browned and cooked throughout. Serve meatballs over spaghetti noodles and top with marinara sauce. Sprinkle with parsley.

I saw this picture the other day and it reminded me of me and Mario’s early days! One of my favorite memories of our time dating was when we spent most of the day tired, lost and hungry. It was one of our first times getting dressed up and going out as a couple. We had 2 weddings in 1 day and we got lost somewhere in Mississippi. The day was long, chaotic and we were exhausted.

When we finally got home, we were so tired that we put a frozen pizza in the oven, fell asleep and let the pizza burn. We still ate it though!  That crusty, burned pizza was one of the best pizzas I've ever had because we sat up, talked and let our truest selves out.

I love traveling, going to events and all of that, but it’s the small things for me. Eating that nasty, burnt pizza while we laughed and talked is one of my favorite memories of us. The tenderness of that is just so special. You don’t always have to go big or go home. It’s really the company the matters!

The Floating Kitchen is almost here! Last year, all of the kids were so prepared and ready to cook. I was worried about how I would hold their attention, but they were bright eyed and bushy tailed the entire class. I can’t wait to meet this year’s students!

I’ve never shared my baby (my dreams and goals) as much as I've shared it at this stage in my career. You don’t let just anybody keep your newborn baby!

In the past, I tried to collaborate and build a team, but I was afraid they wouldn’t see my vision. Now, I have people around me who believe in me, pour into me, make plans for my future, and can see themselves grow in their own way as we progress. To consider the people on my team my friends is just *chef's kiss*. The past few months have been practice for everything coming. I’m so excited for the future!

Summer calls for all the seafood! Tonight, we're having Lump Crab Cakes. This is one of my favorite dishes for the summer because they are so light, simple and versatile. You can have a variation of them for breakfast, lunch, appetizers or dinner.

Tonight, I'm serving them with a remoulade sauce, but you can also go with tartar sauce or even a squeeze of the lemon.

Tonight we're having my Cast Iron Cajun Grouper Fish for dinner. Fish can be boring, but the cajun seasonings in this dish wake it up and give it an extra kick!

This is a one pan wonder so the grouper, veggies and potatoes all have the full flavor of the cajun seasonings.

Check out the recipe below and save for later!

Ingredients

2 lbs of Grouper fillets 
1⁄4 cup smoked paprika
2 tablespoons dried thyme
2 teaspoons onion powder
1⁄2 teaspoon kosher salt
1 1⁄2 teaspoons garlic powder
1 teaspoon ground black pepper
1⁄2 cup butter, melted
2 tablespoon olive oil
 lemons, halved crosswise
1lbs of sliced fingerling potatoes 
1/2 cup of grape tomatoes 

FOR THE FISH:
Preheat oven to 425 degrees. Place cast iron skillet in oven while preheating. 

In a medium bowl slice potatoes and drizzle with olive oil and salt and pepper to taste; toss until coated. 

In a small bowl mix together dried herbs. Brush the fish with melted butter and sprinkle herb mixture and place in hot skillet (Don’t forget to use an oven mitt!!).

Arrange potatoes and tomatoes around the fish. Return to oven. Cook for 12-15 minutes, depending on thickness of fish, until fish is translucent and flaky.

Warning: This is a long post, but I’m in my feelings! Y’all, the past few weeks have been rough!

 For the last 2 weeks, I haven't been home before 10 pm. This morning, I snuggled up to my husband, listened to his heartbeat and told him I missed him. My husband has exceeded all my expectations for a spouse. I can tell him any and every secret and he does not judge at ALL. He lets me be Ragan. If I say I want to make lightbulbs for mars, he’ll ask what materials I need and what do I need from him. He’s down for whatever and he never says I’m doing too much.

Your marriage is a big key in being successful. You can't be with someone who  doesn’t support your dreams and also have their own goals to work towards. You need someone who is going to support and push you. Mario does that and more!

There was a time when I had a decent corporate job and I stopped chasing my dreams. He took me out for my birthday and asked me what I wished for. I told him I wished for peace. He said that is not the girl that I know. You’re wishing for peace as if you’ve arrived and reached your goals!

It made me stop and think. I had a house and decent job, but I didn’t have the life that I wanted. Mario keeps me grounded and never lets me get too big for my britches. He reminds me of my goals and pushes me towards them whenever I slow down. I know this is a long post, but these past few weeks have me in my feelings! I had to shout out my husband for holding everything together!

I’m pulling a recipe out of the vault for the 4th. Mexican Street Corn is a staple on any barbecue holiday for my family. It’s a super simple recipe that is deliciousness on the grill!

Save this recipe for Sunday and tag me when you make it!
 
Mexican Street Corn
4 ears of corn
1/2 of Crema Mexican Agria Sour Cream
1/2 cup of mayo
2 cloves of garlic, crushed (or finely minced)
Âź teaspoon of fine sea salt
Juice and zest of 1 lime
1/4 cup of Cilantro, finely chopped
½ teaspoon of chipotle chili powder
1/3 c. Grated Cotija cheese crumbled
 
Heat your charcoal grill to roughly 400 degrees F.

Gently pull back husks ( keep it intact because we will cover the corn during grilling). Remove the silk thread and pull the husk back covering the corn.

Allow the corn to soak in water for 10 minutes before grilling.

Place the corn on the grill and grill for 10- 12 minutes, turning the cobs frequently. The last 3 min pull the husks back and allow the corn to get some nice grill marks.

Combine Creme Mexican Agria Sour Cream, grated cotija cheese, mayo, garlic, lime zest and juice, and cilantro.

Generously slathered each corn cob with the cheese mixture, sprinkle with chipotle chili powder, and top with cotija cheese and cilantro.

I recently saw a post from about grind culture and self-worth that really resonated with me. Grind culture and social media has everyone thinking they need a small business to be something special. They give the impression that everybody has a side hustle or their own business and that is what sets them apart from everybody else.

I disagree. You can be successful at your 9-5 or a warehouse job. You are worthy not because of your job or side hustle, but because of what’s inside. Now, I'm not the person that says you shouldn't seek validation, because it’s human to want approval from others, but it shouldn't be your driving force.

Your why has to be bigger than other people’s view of you. You have to want it for you, not for anybody else. You have to want it so bad that even if no one cares about your business or craft, you still chase it. You chase it even if you have 1 or 2 clients.

When you’re doing something you are not passionate about, you begin to resent whatever you have created because it isn't your passion and you feel obligated to do it. Speaking from experience!

Like said, you have to create your own path to success and create your own image of what success looks like!

Today we’re mixing it up with frittatas for brunch! People ask for omelettes at events, but I always suggest a frittata station instead. They’re a quick and easy cheat for an omelette.

Any toppings that you’d normally get in an omelette, you can get in a frittata without the extra work. I love to load mine up with spicy italian sausage, cheddar cheese, bell peppers, mushrooms and spinach. Another popular request is a veggie frittata with spinach, tomatoes, mushrooms and cheese.

Patio season is in full effect so tonight we’re moving date night outside! If you know me, you know that date night is a big deal. We pull out candles, music, pillows and have a full set up. One year, we decided to get fancy and hang a hammock outside. We had candles everywhere and a cute table with cocktails and food.  
 
Now, I don't know what they do in the movies, but we couldn’t get it together. It's hard to get in a hammock and be sexy! It was looking all nice and cute with the pillows but once we got in, it was almost to the ground.
 
 
We used that thing one time! Then a bad storm came through a few days later and took the hammock with it. So instead of trying to be cute with a hammock, tonight we're going with the couch on the patio! What are your plans tonight?

Today, we’re celebrating my daughter Alexandria’s birthday! This year, she wanted something non-traditional, so I baked her my Lemon Cake. This cake screams summer!  Whether people are coming over for Sunday dinner, afternoon tea on the patio or a birthday celebration, it’s the perfect dessert for summertime gatherings.

The burst of lemon flavor is simple, super light and delicious. I’m not sharing this recipe just yet. You’ll have to wait a while for this one!  Do you prefer lighter flavors of cake like this one or are you all about the chocolate like me?

Taco Tuesdays are becoming a big deal around here! It's our time to eat and have fun together as a family. During the pandemic, we became bored with dinner and work routines. My mind was focused on work Monday through Friday. I saved all the fun, when there was time for it, for the weekend.

If this pandemic has taught us anything, it's that life can be unpredictable! So why wait for the weekend to enjoy yourself?

Taco Tuesday has become something we look forward to. For my family, it’s become a party during the week.

One of my favorite quotes is "Life is uncertain; eat dessert first." Don't save everything exciting for the weekend. Create a life where everyday has something to look forward to!

Tonight, we had mussels for dinner. A lot of people sleep on them, but they are such a versatile dish. Mussels can be served over pasta, in a stew or in paella. One of my favorite ways to serve them is in a white wine sauce.

You can’t go wrong with a butter, garlic and white wine sauce! I love to take the toasted bread I serve with mussels and dip it in the sauce.

Check out the recipe below and save for later!

Mussels in Garlic White Wine Sauce 

4lbs. mussels
2 cups dry white wine
4 large shallots finely chopped
4 garlic cloves, minced
½ teaspoon salt
6 tablespoons butter, cut into pieces
1⁄3 cup flat-leaf parsley

DIRECTIONS
Rinse and scrub mussels under cold water.

Using a paring knife to remove beards.

Heat a large stockpot to medium heat, combine wine, shallots, garlic, and salt. Add butter.

Simmer 5 minutes. Add mussels, cover, and increase heat to high. Cook until all mussels open, about 5 minutes. Stir in parsley. 

Remove from heat. Serve immediately with crusty bread or over buttered pasta.

I went into the store today for fresh produce and couldn't find any peaches. I love a good strawberry or blueberry recipe, but nothing comes close to my love for peaches. I love to eat grilled peaches with ice cream, peach cobblers and Peach Sangrias during the summer. I know, I know, peaches peaches peaches, but I'm so ready for peach season y’all!

Happy Friday! These Classic Margaritas were so good we had to run it back for Date Night! The keys to great margaritas are a splash of orange juice or muddled orange and fresh, fresh, fresh ingredients. I know that it's easier to use bottled ingredients, but fresh ingredients add much more flavor.

I went into a bar in New Orleans and was surprised by how delicious the margaritas were. I was expecting the bar to only have whiskey or beer, but the margarita I had was so flavorful. It had the perfect ratio of tequila and lime juice with a hint of the orange juice. I looked behind the bar and one of the guys was slicing and squeezing limes. The bar was making the margaritas with fresh ingredients.

Trust me, fresh ingredients are the difference between an upscale Margarita and something that tastes like it came out of a can. Buy the fresh produce and upgrade your Happy Hour!

Taco Tuesday! Tonight we're having a Classic Margarita and a Mexican charcuterie board (aka all the ingredients for tacos served on a platter)! 😂😂 We have shrimp, skirt steak, spanish rice, red peppers, black beans, salsa and queso. I marinated the steak in a Tequila Marinade.

Check out the recipe for the marinade below and save for later!

Tequila Lime Marinade 

3 tbsp minced garlic 
3/4 cup lime juice
1/2 cup tequila
1/4 cup soy sauce
1 bunch fresh cilantro; chopped 
1 tbsp jalapeĂąo; diced
1 tbsp ground black pepper
1 tsp ground cumin
1 tsp dried oregano 
1/2 tbsp salt
2 lbs. skirt steak or flank steak 

Mix marinate in a ziplock bag; add steak and refrigerate for 6-12 hours

Photo dump from our New Orleans vacation! We definitely needed this time to relax and reconnect with one another without the kids. I loved sleeping in, people watching and everything that we ate and drank. We ate so much food and drank so much the only thing that should be touching my lips for the next week is water!

All of the food was delicious, but the red beans and rice at was amazing. I'm not a big bean person, but those were the best beans I've ever had. That with the cornbread had me in heaven.

I loved every drink that I ordered, but the No. 40 with hibiscus syrup, lime and ginger ale from was my favorite. I went for the fried turkey necks, but they aren't back on the menu yet so I had Korean Style Beef Short Ribs and Napa Cabbage with Potato Kimchi.

I had an amazing time! I can't wait for our next vacation.

Happy Wednesday! Did you do something today that feeds your soul? Did you do something that makes you happy? Cooking originally started out as a hobby for me. It was something I wanted to learn and be good at. As I worked harder at it, it eventually became a business. I am blessed because being a chef brings me so much joy! I love the smile on peoples' faces when they eat my food! I still get the same joy out of it that I got in the beginning. But, you have to be careful when something you love becomes a source of income. People have a way of taking things that you really enjoy and warping it into something else. This is why I say everything you do shouldn't be monetized. Some things should be done for the sole purpose of making you happy.

For me, plants have become that hobby. I have a quiet friendship with them that brings me so much peace and joy. I usually wake up early in the morning and take some time to water and nurture them. That alone time with my plants has become an important part of how I start my day. Caring for my plants feeds my soul and puts me in a good mood. What hobby brings you joy?

This cool and rainy weather has me wanting all of the comfort foods! My Roasted Chicken w/ Purple Fingerling Potatoes are an easy one skillet comfort meal that is perfect for any day of the week! I love the roasted chicken, but the purple fingerling potatoes are the star of the show! The potatoes are earthy and buttery and pair so well with the chicken, thyme and rosemary in the dish.

Save this recipe for later and tell me what you think!

Ingredients

1 3½–4-pound whole chicken
Kosher salt
1 tablespoon garlic powder
1½ pounds purple and fingerling potatoes, scrubbed and left whole
2 tablespoons olive oil
1 tablespoon thyme leaves
8-10 Rosemary sprigs
1 tablespoon parsley
2 tablespoons olive oil, divided
Freshly ground black pepper
1/2 cup Grape tomatoes

Preparation

Pat chicken dry with paper towels and drizzle with olive oil. Season generously with garlic powder, salt and pepper, inside and out. Place in a 12" cast-iron skillet or 3-qt. enameled cast-iron baking dish on rack. Preheat oven to 425°.

In a bowl, toss potatoes , thyme and parsley until coated; season with salt and pepper.

Tuck and arrange potatoes and rosemary around the chicken. Top with grape tomatoes. Roast until potatoes are golden brown and crisp and an instant-read thermometer inserted into the thickest part of breasts registers 155°, 50–60 minutes. Let chicken rest in skillet at least 20 minutes.

Serve with a green vegetable.

Happy Mother's Day to an extraordinary human, Mother, Grandmother, Sister, Cousin and friend! Everything I am is because of you. These pictures along with the one on page is the perfect expression of who you truly are. Everyone’s life of the party! You've been the love of my life and the life to my party. Thank you for being my lifelong, biggest and loudest cheerleader. Anyone that knows her knows she loves to dance. During our wedding, she had not long had knee surgery but that didn't stop her from dancing all night 😂😂😂! I love you with my whole heart!
