So we love an everything bagel piled with smoked salmon and the works, but since we are doing just plants these days, here is my carrot lox on an everything bagel spice crusted potato bread! I was lucky enough to spend the morning Sunday mushroom hunting with my nephew Matt. He is a master forrager and knows so much about which mushrooms are and are not edible. It's extremely rare for these guys to take anyone to their secret spots, so I feel quite privileged! Worth all the mosquitoes, buckthorn, steep climbs and the disgusting giant spiders web I walked right through!! Not getting over that any time soon!
Now just have to figure out what to cook........

I often get asked to prepare food for customers with dietary restrictions and now our own family is one gigantic one since going vegan for my husband's diabetes. Happy to say in less than 2 months he lost 25 pounds and no longer needs medicine! I have been putting my chef skills to the test coming up with creative meals. This is my all vegan charcuterie board with cheeses, dips, and terrines, salamis and home made crackers.

Seems like deviled eggs are on most people's menu this time of year, but some aren't fans and just want a good old hard boiled one! Here's a pretty way to fancy them up for Easter or Passover so they are a bit more interesting. Serve them with different flavor salts or things to dip them in like bacon crumbles or everything bagel spice. I used black salt and pink salt. If you want my trick just ask!

My latest cake for a wine party. Everything is edible! The wine bottle and grapes are fondant, the flowers are edible wafer paper and the basket is cereal. The cake itself is a cabernet infused chocolate with BlackBerry buttercream and chocolate ganache.

These are my deviled eggs with a little inspiration that came from dying Easter eggs!
I boiled onion skins to color the water a pretty amber brown, then after hard boiling my eggs and cooling them down, I rolled them gently on the counter to crack the shells all over. Then I placed them in the colored water over night . Just peel the next day and you will have an antiqued, crackle effect. Beet juice is a great natural coloring as well for a more colorful egg.

I've decided to share one of my private recipes perfect for this time of year and completely addictive! It's my homemade bacon caramel corn!!
Sometimes I add nuts, pretzels, coconut

Recipe:

Set oven to 250

4 strips bacon cooked until crisp. finely chop and reserve fat.
1/2 cup un popped popcorn kernels
Pop in 1-2 T bacon fat. Put popped corn in large bowl 2 times the size of ammt of corn.

Caramel:

1 c butter
2 c brown sugar
1/2 c corn sugar
2 T molasses
1t salt
1/2 t baking soda
1t vanilla

Over med heat, melt butter, sugar, corn syrup and salt. Stir constantly until boiling. Boil 4 minutes without stirring. Off heat, add baking soda and vanilla. Pour over popcorn. Sprinkle on bacon pieces and stir together.

Spread onto a parchment lined rimmed cookie sheet and bake 1 hour stirring every 15 min.

Makes about 10 cups
Enjoy!
