I just finished the biggest catering job I've had in 2025. That's right, in the middle of November on a Thursday. Not the biggest job I've ever done, but this year it was. I served 210 people efficiently, with plenty of food for everyone and some leftovers too. We have time to beat that. If anyone wants to hire me for their holiday party in December, whether it's 50 or 250 people, I thrive in the weeds and excel under pressure. I can cook too 🤪 Contact me to get a quote.

Today is the day (Sun 11/2) I will be parked at Able Ebenezer Brewery Company. That address is 31 Colombia Cir Merrimack NH.

I will open the window at 12 o’clock and serving an all BBQ menu. Smoked meats, homemade sides, you can get plates or sandwiches.

Here’s the deal, I have not served to the public in a while because I’m a caterer first and I have been busy with that. I could be open and have food left for two hours or three hours. I’m not really sure. I’m saying 12-4 or sell out and hope I do sell out.

Lunch at the brewery. Please come get BBQ and grab a beer. It will be a nice day for it💚

I will be returning to Able Ebenezer Brewing Company for a BBQ pop-up. Sunday, Nov. 2nd, from 12-4 or sell-out. I'm keeping the menu simple with all my best-smoked meats and homemade sides.

~Plates
~BBQ sandwiches
~Meats by the pound (1/2 lb increments and half rack or full rack ribs)
~Homemade sides by the pint size

Make your own barbecue platter by buying a half pound or a full pound of a couple meats and a couple pints of sides.

Meats: brisket, pulled pork, maple St. Louis-style ribs, honey BBQ pork belly burnt ends

Sides: potato egg salad, macaroni and cheese, BBQ beans, pineapple coleslaw, and for the first time, I'm making corn elote esquites (street corn in a cup)

Huge announcement and the future of
603 Smok’n Que.

I’m starting a new business that I’m going to pair with 603 Smok’n Que. I thought I should lead with this: nothing is happening to the barbecue company. I’ve been thriving, really busy, and I decided to keep this company as is. I’ve been the face of this company, and I’m involved in every aspect. I do all the shopping, prep work, I’m smoking the meats and making all the sides and sauces. Plus, I’m on every job to execute. If you email or call for a job, I’m the one who answers. It’s a lot, but I like it, and it’s my baby. It’s not going anywhere. I’ll do it till I die. I hope to be old and catering for you all.

Now for the new business! I’m going to be parked in Amherst, New Hampshire, and starting off by opening four days a week, Wednesday through Saturday, 11:30-7. This will be a stationary trailer that won’t move and will operate like a restaurant. Walk-up and DoorDash will be available. The name is Punks Burgers and Wings. I’m really excited, it’s a concept I’ve had for quite a while. People love the smashburgers out of the trailer when I go to breweries, and I’m really excited to bring Amherst and surrounding cities this great menu I came up with.

I’m picking up the trailer soon, I’ve been working out all the details, but I still have to get my licenses and permits. That’s a process, but I hope to be open in November, but unfortunately, no promises. It’s a weird time to start a food trailer, but this way, I can be in the trailer every day for the first 4-6 months until I start to kick off catering season with 603 Smok’n Que. There’s still a lot of work to do. But I want to get you all excited, and please follow all my pages, Punks Burgers & Wings, on Facebook, Instagram, and TikTok.

I thought about opening a restaurant with the Punks brand but ultimately decided to stay in the food truck world.

Barbecue fans! I will be doing pop-ups next to the Punks trailer on Sundays when Punks is closed and serving the best barbecue around. These pop-ups will be random and mostly during the cold months.

I’m going to be getting a lot busier, but I’m looking forward to the challenge. You can start by supporting me by following my pages. I’ll be posting updates and start date when I get that information. Amherst, Merrimack, Nashua, Bedford, Milford, I see you, and I want to serve you and your family. Our Story

My love for BBQ took me on a road trip to Georgia to buy my smoker in the fall of 2014 and I have been crafting my recipes ever since. Before that I started selling hot dogs and sausages outside a Harley Davidson and with good word of mouth I got asked to sell food at NE dragway. From there I started to sell pulled pork sandwiches with rave reviews. Catering was a natural growth idea and that's when 603 Smok'n Que was born. Every party is special to me and I spend more time preparing for your special event. I have a set menu and willing to work with the customer to customize a special menu of there request. I not only do smoked meat but also anything grilled and a BBQ MEX fusion. I’m told I have the best BBQ around! I hope to work with you soon to cater your special day.
