After the catered luncheon we did today we spent the afternoon working on getting Belle Rae's ready to open. Still waiting on the grease trap to be completed so we can get final inspection! Can't wait to bring the community some great Texas and Louisiana Cooking!

We did a fun Cruise ship themed murder mystery dinner last evening! Tons of fun! It's always a blast doing themed menus that are outside the normal box!

Just finished up our 4 days of feeding 100 baseball players each day! It rained a ton and we had to move meals around the weather, but everything went awesome and we did some amazing food! I'm a bit pooped after up and down all the stairs with heavy cambros lol!

We finally got a little break today and tomorrow, so we made a fun breakfast this morning! Sour Dough and Lox on my prized atomic pattern 1950's plates!

Our final graduation party of the season! Met some fantastic folks tonight! We had cheddar jack stuffed Jalapeños wrapped in applewood bacon, brushed with sweet chili glaze, mesquite brisket smoked queso blanco and cherry wood smoked picnic butt shredded and dowsed in Dr Pepper BBQ sauce with fried onions!

Burger and Loaded Fries Bar! Awesome food and set up with the flame grilled burgers and fresh cut fries cooked on-site!
Unfortunately the client only ordered food for 60% of her guest count and ran out! In this business you try your best to get the clients to purchase what they need for a successful event, however sometimes they just won't do it! It's upsetting when they then come at you like it's your fault when they run short and you've explain to them that this will happen way ahead of time, if they don't order significant amounts to cover their party!
