I know some of you that read this might be chefs or cooks, please share if you agree, you will…..
It’s 3:47 am. I’ve been in the kitchen since 6:45 am yesterday morning.
The Red Hot Chili Peppers are blaring on the blue tooth speaker. I’m alone.
I won’t leave till after dinner service tonight, 38-40 hours, a weeks work (for you 9-5rs) in one straight shot.
I don’t HAVE to do this, I want to.
I want to honor the tradition, the passion, the drive, my mentors hammered into me.
After 40 years in the kitchen I still wonder if I deserve to wear that word on my food stained white coat.…,, CHEF.
I want to honor my protégés, so they know their chef practices what he preached. I want to honor my patrons, they take the fruit of my labor into their bodies. It’s not toil, it never has been.
I won’t get paid extra, no one will pat me on the back, in fact, most times I do this no one ever even knows.
But later today, if I’m true to my craft, true to the chefs that put up with me when I was younger, and true to the food I’ve been trusted with, someone might turn to their server and say……
“Tell the chef our meal was amazing.”
And that will make it ok for me to wear that word on my coat. That will be enough
At least until tomorrow
