Easy Recipe That Taste Good Too...

Alec Naman from Naman's Catering called this morning and said, "I thought you might like a recipe with Shrimp this week... Like maybe my Garlic Shrimp & Pasta dish. Easy for a quick lunch or dinner. You'll love it."

Garlic Shrimp Spaghetti
INGREDIENTS
o 8 ounces spaghetti or pasta of choice
o 4 tablespoons butter divided.
o 1-pound large shrimp peeled deveined
o ¼ teaspoon salt
o ½ teaspoon crushed red pepper
o 4 garlic cloves minced.
o 2 tablespoons lemon juice
o 3 tablespoons freshly grated Parmesan
o 2-3 tablespoons chopped fresh parsley for garnish.

INSTRUCTIONS
o In a large pot of boiling salted water, cook the pasta according to package instructions; drain well and reserve 1 cup of pasta water.
o In a large skillet over medium high heat, melt two tablespoons butter. Add shrimp, salt and crushed red pepper, and cook stirring occasionally, until shrimp is opaque pink, about 2-3 minutes. Remove from heat and set aside.
o In the same skillet, add the remaining butter and garlic and cook until fragrant, about one minute. Add the lemon juice, pasta water and parmesan cheese and stir to combine. Transfer the spaghetti to the skillet and toss with the sauce.
o Add the shrimp on top and garnish with parsley. Serve immediately.

You Will Love This Recipe This Holiday Season...

Alec Naman from Naman's Catering called us this morning and said, "Let's do this Brown and Wild Rice recipe this week for a side dish at Christmas..."

Sounds like a great dish to add to the table! It's What's Cooking!!

Brown and Wild Rice with Walnuts and Cranberries

2 teaspoons canola oil
2 shallots, finely chopped
2 garlic cloves, minced
1/2 cup brown rice
1/2 cup wild rice, rinsed
3 cups Basic Vegetable Stock or reduced sodium vegetable broth
1/8 teaspoon salt
1/8 teaspoon crushed red pepper
1/3 cup dried cranberries
1/4 cup finely chopped fresh parsley
2 tablespoons chopped walnuts
1/2 teaspoon grated orange zest

In a large sauce pan over medium heat, heat the oil. Add the shallots and garlic and cook, stirring, until softened, about 3 minutes. Add the brown rice and wild rice; cook, stirring, until lightly toasted and fragrant, about 3 minutes. Add the stock, salt, and red pepper; bring to a boil. Reduce the heat and simmer, covered, until the rice mixture is almost tender, about 30 minutes. Add the cranberries and cook until the rice mixture is tender, but still chewy, 7-10 minutes. Add the parsley, walnuts, and orange zest; toss lightly.

We Are Always Cooking Something Good At Naman's Catering...

Alec Naman from Naman's Catering called us this morning and said, "Brussel sprouts this week!!"

Brussels Sprouts with Bacon, Pecans, and Cranberries

Ingredients
• 12 oz Brussels sprouts ends trimmed, yellow leaves removed
• 2 tablespoons olive oil
• ¼ teaspoon salt
• 4 slices bacon cooked and chopped
• 1 cup pecans
• ½ cup dried cranberries

Instructions

How to Roast Brussels Sprouts
1. Preheat oven to 400 F.
2. Slice all Brussels sprouts in half.
3. In a medium bowl, combine halved Brussels sprouts, 2 tablespoons of olive oil, salt, and toss to combine.
4. Place Brussels sprouts on the baking sheet, cut side down.
5. Roast in the oven at 400 F for about 25 minutes. During the last 5-10 minutes of roasting, turn them over for even browning, the cut sides should be partially charred but not blackened.

How to Cook Bacon in the Oven
1. Line the separate baking sheet with foil. Add the bacon slices in one layer. Bake in the preheated oven at 400 F for about 20 minutes or until the bacon is done. You can do it at the same time as roasting the Brussels sprouts.
2. Drain bacon of fat and slice the bacon into small bites.
How to Toast Pecans
1. Line a baking sheet with parchment paper. Add pecans in one layer.
2. Toast the pecans for about 5 minutes (maybe a bit longer) in the preheated oven at 350 F until they get darker in color.

Prepare Dried Cranberries
1. For best results, briefly soak the dried cranberries in hot water. Bring a small pot of water to boil.
2. Add dried cranberries to a medium bowl. Pour hot water over the cranberries and soak them for about 10 minutes. Drain.
Assembly
1. In a large bowl, combine roasted Brussels sprouts, warm chopped cooked bacon, toasted pecans, and soaked dried cranberries. Toss everything together. The olive oil from Brussels sprouts and fats from bacon should be enough to coat the ingredients. If desired, add 1 tablespoon of olive oil to mix with the salad (optional).

Alec Naman from Naman's Catering called us this morning and said, "Let's talk about cooking a Leg of Lamb, Maybe Grecian Style. Lamb Is always good for a Holiday treat."

WOW!!! That's What's Cooking!!!

Greek Roasted Leg of Lamb

Ingredients
• 12 cloves of garlic, peeled
• 7 lb. leg of lamb
• Salt and pepper
• 3 tsp paprika powder
• 3 tsp garlic powder
• 2 tbsp olive oil
• 2 large onions, quartered
• 10 sprigs of thyme
• 3 sprigs rosemary
• 3 tsp dried oregano
• 3 dried bay leaves (or 5 fresh)
• 1/2 cup lemon juice (2 - 3 lemons), plus more to taste
• 1 1/2 cups of white wine (or sub with chicken broth)
• 2 cups chicken broth (liquid chicken stock)

Instructions
1. Preheat oven to 465°F
2. Use a small knife to make around 25 incisions all over the lamb,
3. Cut around 6 cloves into slivers and stuff them into the incisions.
4. Sprinkle the lamb generously all over with salt, pepper, paprika and garlic powder. Drizzle with olive oil and rub all over the lamb.
5. Place the lamb in a roasting pan and roast for 30 minutes or until it has a nice brown crust.
6. Remove from the oven. Turn the oven down to 350°F.
7. Turn the lamb upside down. Pour all the remaining ingredients in the pan around the lamb (including remaining garlic cloves). Fill the roasting pan with hot water so it comes up about 1/4 - 1/3 of the way up the height of the lamb.
8. Cover with lid or with baking/parchment paper then 2 layers of foil. Bake for 3 hours. Top up water if it dries out (e.g. Might happen if your lid is loose)
9. Remove the roast from the oven and remove the lid/foil. Turn the lamb over so it is the right side up.
10. Cover again and roast for a further 2 1/2 hours, or until you can pull meat apart with forks.
11. Remove the cover and roast for a further 20 - 30 minutes (to brown).
12. Remove from the oven and transfer lamb to serving platter. Cover loosely with foil and rest for 30 – 40 minutes.
