Great recipe for easy cooking.

Alec Naman from Naman's Catering called us this morning and said, "Let's breakout the Grill this weekend and cook up some Tuna with a Honey Sesame sauce."

What a great weekend to grill!! It's What's Cooking!

Grilled Tuna Steaks w/ Honey Sesame Sauce

Ingredients
3 tablespoons soy sauce
1 tablespoon unseasoned rice vinegar
1 teaspoon honey
1 tablespoon toasted sesame oil
2 teaspoons finely grated fresh ginger
1 teaspoon minced fresh garlic
2 ahi tuna steaks about 1 pound
2 tablespoons olive oil
kosher salt
freshly ground black pepper
Sesame seeds to taste
thinly sliced green onion to taste

Instructions
• Make dipping sauce. In a medium bowl whisk together soy sauce, rice vinegar, and honey until honey dissolves. Whisk in sesame oil, ginger, and garlic until emulsified. Leave at room temperature or refrigerate if desired.
• Preheat a gas grill (or charcoal grill) to high.
• Rinse tuna steaks and pat dry with paper towels. Rub all sides of the tuna with olive oil and season with salt and pepper. Grill tuna for 2 minutes per side, until seared on the outside and rare in the center. (If you prefer a cooked center, cook an additional ~2 minutes per side.) Transfer tuna to cutting board. With a thin, sharp knife, thinly slice tuna across the grain (1/4- to 1/2-inch-thick slices). Sprinkle with sesame seeds and sliced green onion. Serve with dipping sauce.

Asian-Style Noodles with Spicy Honey Grilled Chicken

Ingredients
2 ea. boneless, skinless chicken breast halves
2 cups (8 oz) broccoli florets
1 ea. small red bell pepper, cut into thin slice
1 ea. medium carrot, thinly sliced
1 (9 oz) package Asian style noodles
2 ea. green onions
¼ tsp Chinese five-spice powder
2 T sesame seeds
⅓ cup rice vinegar
¼ cup honey
2 T peanut butter
2 T soy sauce
2 T vegetable oil
1 T sesame oil
2 garlic cloves, finely chopped
½ T crushed red pepper flakes
¼ tsp ground ginger
Method
1. In a large bowl, combine rice vinegar, honey, peanut butter, soy sauce, vegetable oil, sesame oil, garlic, red pepper flakes and ground ginger. Remove 3 T sauce to plastic bag: reserve remaining sauce in bowl.
2. Add chicken to marinade in plastic bag, turning to coat. Close bag securely and marinate in refrigerator 30 minutes, turning once.
3. Meanwhile, cook broccoli, peppers and carrots in boiling water, 2 to 3 minutes, or until crisp-tender; drain and set aside.
4. Cook noodles as package directs; drain.
5. Add noodles, cooked vegetables and green onion to sauce in bowl; toss to coat. Set aside.
6. Remove chicken from marinade, discard marinade. Sprinkle chicken evenly with Chinese five-spice powder. Grill over medium coals 6 to 10 minutes or until done, turning once. Slice chicken across grain.
7. Arrange chicken on top of noodle mixture. Sprinkle evenly with sesame seeds.

Alec Naman from Naman's Catering called us this morning and said, "Let's Roast some Chicken this week because it's too cold to grill. Let's try out my Chicken Provencal this week."

Roasted Chicken Provençal

INGREDIENTS

4 chicken legs or 8 bone-in, skin-on chicken thighs
2 teaspoons of kosher salt
1 teaspoon freshly ground black pepper
½ to ¾ cup all-purpose flour
3 tablespoons of olive oil
2 tablespoons herbes de Provence
1 lemon, quartered
8 to 10cloves garlic, peeled
4 to 6medium-size shallots, peeled and halved
⅓ cup dry vermouth
4 sprigs of thyme, for serving

Step 1
Heat oven to 400 degrees. Season the chicken with salt and pepper. Put the flour in a shallow pan, and lightly dredge the chicken in it, shaking the pieces to remove excess flour.

Step 2
Swirl the oil in a large roasting pan and place the floured chicken in it. Season the chicken with herbs de Provence. Arrange the lemon, garlic cloves and shallots around the chicken, then add the vermouth to the pan.

Step 3
Put the pan in the oven, and roast for 25 to 30 minutes, then baste it with the pan juices. Continue roasting for another 25 to 30 minutes, or until the chicken is very crisp and the meat cooked through.

Step 4
Serve in the pan or on a warmed platter, garnished with the thyme.
