My favorite year yet. 🫶 Lots of cheese, loads of b•fit eats meals, my beautiful baby boy, Dylan, marrying my perfect match, an extended maternity leave, a couple short getaways with family & friends, Rural Route Ramble success, private chef gig for a TV show, a trip to Nashville, continuing love from my very supportive family, and the best group of pals! ❤️

Tonight we cooked foil packets on the grill, and it was so SO yummy! 🔥 Does anyone else use the Kerrygold Irish Butter? It's as good as the price tells you it is! 🤣

Finally posting about my recent gig! 🎥 Many of you have heard that the folks from Discovery Channel's 'Homestead Rescue' filmed an episode at an acreage just outside of Moville, which led to them needing grub delivered on set! Guess who they asked to cater?! 👀 ME!! I had to take a few deep breaths, make sure it wasn't SPAM 🤣, and ask my family if everyone was on board to make it all work! It was a GO! 😱💃

*This is about to get lengthy*

It was days of prep between menu planning, list making, baby sitting and on site help schedule, grocery shopping, etc! 📝🛒 The Production team requested the following menu for 9 days of filming: compostable paper goods, 2 proteins, 2 sides, 1 greens, 1 vegan protein, 2 vegan sides, 1 dessert, 1 vegan dessert! 😵 First I outsourced the desserts, thank the lord for Hillary & Liz! 🙌👏 They knocked it out of the park!

Some highlights from each day:
Day 1 ~ Hand pressed Iowa Beef burger bar was a huge hit! Bo was able to help, which definitely helped calm my nerves! 🍔 Also, realized honey is not vegan friendly! 😱 thank goodness I thought of it pre-service, but I did have to tweak my recipes for the week!

Day 2 ~ it was COLD. Holy smokes. We attempted to serve 'hot food' from a UHaul van, but the wind wouldn't allow it! My sister Brittany literally did a squat inside the van for well over 45 minutes straight during service! I said it was a good thing I had a short, in shape assistant that day! 🤣 it was MISERABLE, but the laughs after will be forever memorable!

Day 3 ~ Movillatte showed up to warm everyone up, so we snagged a pic of us small town girls doing big city things! 😁

Day 4 ~ My mom came out to help serve which is always so much fun! She always feels the need to brag about me a little bit! 😉 I'm good with that! Snuck in charcuterie cups as a side! 🧀

Day 5 ~ My nephew, Wylie is a big fan of the show, so I had asked him if he wanted to help serve! WOW! It turned into the coolest experience! He lit sternos for service, asked everyone if they wanted a cake pop for dessert, white or chocolate?!, asked Matt Raney for a picture, and THEN was asked if he wanted to go on set and meet Marty Raney (Marty usually didn't leave set during lunch service)! OMG! He chatted, got some solid advice, was told he could visit Alaska anytime, received Marty's personal card, and his carpenter's pencil! Such an unbelievable experience for him and us! ✨️🧒

Day 6 ~ still going strong! Barely. 🤣 the wind was a LOW light of the days, so van service continued. I had also found out they came from a Homestead in Hawaii to Iowa in February/March...well that's hard to compete with! 🫤

Day 7 ~ my sister Kalli was able to come on set! We were now very popular amongst 2 farm kitties and a rooster, so that added to the fun of van service! 😅 We served BBQ pulled pork and BBQ shredded beef with Happy Hank's BBQ Sauce!! They loved it! Zesty was a crowd fave!

Day 8 ~ it's the final countdown! The vegan eaters were more than impressed with my eats, which was a very proud moment beings that I had never experienced with vegan cooking! I learned a lot, and actually had fun curating new recipes! A couple faves: Wild Rice Harvest Bowl, Homemade Black Bean Burgers, Spinach Artichoke stuffed Portabellas, Buffalo Chickpea Stuffed Peppers!

Day 9 ~ we're going to make it! We grilled Rib-Eye Steak Sandwiches with mushrooms & onions, Tiefenthaler Quality Meats skinless brats, black bean burgers, and pineapple! The brats were a HUGE hit! I don't think we realize how lucky we are to have Holstein so close! We also served them on Sunkist Bakery buns! We tried to serve local as much as possible! 🤗 We learned that everyone has their own name for cheesy potatoes!

Our neighbors, Lindee & Dustin joined us for the final day of service! They are also longtime fans of the show! I never did get a photo of me and the TV crew, 🙈 but the memories will last me a lifetime!

A huge thank you to the Production crew for having me, my on set help throughout the week, and those who cared for our sweet baby boy while mama got her groove back! 😁😁 Brittany Jo Eckert Kalli Welte My Mama Melissa Jackson Sam Thomas Bo Thomas Lindee Brosamle I never take enough pics, but I hope the pics I did take let you in on some of my experience! 😊
