Growing up, we all knew that events, brought out the best food one could imagine having access to. Whether it was a wedding, a baptism, a birthday party or even a funeral, food seems to take center stage and shine during these moments. Southern food, in particular, fits perfectly for events. Maybe it’s because so much about southern food, from its preparation to serving has to do with sentiment. Whether it’s Grandma’s baked Candied Yams or Uncle Bobby's Deep Fried Turkey, we know that the recipes in Southern food come from the heart. When L.E.S. EAT Catering proprietor Kimberly Crosby-McCoy decided she wanted to start a catering service and share some of her family’s own soul food recipes, it was based on the same values and principles. “L.E.S.” is an acronym based on influences in Mrs. Crosby-McCoy’s life: her Grandmother Laura, her maternal Aunt Eleanor (affectionately known as Auntie Elle) and her mother, the lovely Mrs. Shirley Crosby. From these women, Mrs. Crosby-McCoy learned about cooking and serving others as well as importance of being prepared and determined to succeed. She received her entrepreneur spirit from her late grandmother Linda Crosby, she use to hustle & sell food out of her kitchen in Roger Williams Projects in Mobile, Alabama. Kimberly has her Food Manager Certification in the States of Illinois and Indiana.
