Light and refreshing, this course was a nice palate cleanser. Super simple to make- all the flavor and color comes from fresh apples, apple juice & a lillte simple syrup

These flavors were amazing together.

I was going to add a fun song referencing "green goddess," but apparently that means something very different outside the culinary world 😬

1st Course: Duck Rillette on Toasted Brioche. Pickled radish & pickled red onion garnish, balsamic reduction

Rillette is similar to a pate, but no organ meat. This was a 3 day labor of love and took 2 whole ducks- that's what Eleni was breaking down in a previous pic

Never a dull moment in catering!
Long story short, even though I've been to this Client's home a 100x, today I didn't gun it hard enough up the gravel hill and got stuck. Thankfully, THIS client lives on several hundred acres and has all the tools. So he and his son, in their nice clothes, came and got me unstuck! And then thanked ME for coming. We have the BEST clients ❤️🙌🏽
