✨Saturday Fun Fact✨
Red Velvet Cake’s origins go all the way back to the Victorian era! Back in the 1800’s they didn’t use dyes or food coloring to turn the cake red— it was reportedly due to a chemical reaction from the cocoa. Back then, cocoa wasn’t processed with alkali as it is today to neutralize it’s natural acidity, so it reacted with the baking soda in the cake, creating a deep crimson hue. It wasn’t until World War II that the extra coloring was added— and then only by necessity! With strict rations making staples like eggs and milk hard to come by, creative bakers looked to beet juice to make this special cake—not only making the cake an extra bright red, but creating an extra soft and smooth texture as well. Some bakers still use recipes that include beet juice today!
