He started out with one personal chef client, then two. Before you knew it, he was making a good living and having a blast doing it. Foodini's naturally morphed into a full service catering company soon after its inception. Although Foodini's f

ocuses more on corporate catering and larger scale events, Chef John continues to prepare customized meals for his Meal Prep Delivery service clientele. Chef John solidified his role as a prominent Jersey Shore caterer in 2007 when he purchased and built out his 1200 square foot commercial kitchen in Neptune, NJ.

I have been doing my best to stay away from bread and these chaffles really help out by tricking the Mind into thinking it's eating a bread product. There are 1000's of recipes for chaffles but the basic formula is simple. INGREDIENTS 1 Lg egg 1/4 cup low moisture Mozzarella 2 Tbsp cream cheese (you can add some parm or pecorino as well if desired) METHOD Soften cream cheese, mix in shredded mozzarella and egg. (You may season it with your favorite dried Italian seasonings or keep it very simple and don't season it at all). Preheat a chaffle iron, spray with avocado oil, place about a 3 oz ball in your chaffle maker and close the lid. Allow to cook for 6 minutes. When you stop hearing the sizzling noise it will be done. Pop it out with a fork, place on top of some deli or Canadian ham slices, top it with a runny egg and slather on the homemade holly sauce! In addition to Eggs Benny, I use chaffles for a multitude of applications. I love open-faced tuna melts, chicken apple salad, avocado "toast", BLT's, the list goes on!
