π Loaded Potato Salad Bites
*15 to 17 small gold potatoes
*4 boiled eggs
*1/2 cup mayo(maybe more)
*1 tsp mustard(maybe more)
*cooked crumbled bacon
*diced green onions
*shredded cheese
*garlic powder
*seasoning
*salt
Put 4 eggs boiling. Next, remove any bad areas from the potatoes, then rinse, dry, and drizzle with olive oil and salt. Bake on a foil lined baking pan for 45 to 55 minutes at 350 degrees. Baking times may vary. Let slightly cool, then scoop out most of the potatoes from each and set aside in a bowl. You want to leave about a 1/4 to 1/2 inch of potatoes on the skin. Sprinkle a little shredded cheese inside the potatoes. Once the eggs are done, let cool, peel, then cut in half. Remove and smash the yolks in a bowl. Chop up boiled egg whites, then set aside. Add mayo, mustard, salt, garlic powder, and seasoning to the mashed yolks. Mix. Add about a 1/2 of the mashed potatoes that you previously scooped out. Next, add a little shredded cheese, cooked/chopped bacon, diced green onions, and chopped egg whites. Save some bacon, cheese, and green onions for garnish. Add extra mayo and mustard if need be. If it's too creamy, you can add a little more potatoes. Get it to the consistency that you prefer. Fill a Ziploc with the mixture, then cut one corner of the bag to make it easier to stuff the potatoes. Garnish with extra bacon, shredded cheese, green onions, and seasoning. Enjoy!

A few asked, so here's a step by step instructional video on how to make it! π
Saltine crackers (about 48)
1 cup light brown sugar
2 sticks unsalted butter
1 block softened cream cheese
1 tsp vanilla extract
1/2 tsp salt
4 cups powdered sugar
1 cup marshmallow fluff
3 cups white morsels (divided)
red food coloring
green sugar crystals
coconut oil (optional)
Note: You can use red cookie icing instead of melted white morsels and food coloring to pipe on stripes. Store bought works ok.
Preheat oven to 350 degrees. Line a baking pan with foil and lightly grease. Put down single layers of crackers filling the entire baking pan. Make sure the crackers are touching. In a sauce pan, melt butter on medium heat and add brown sugar. Mix well. Once the mixture reaches a boil, let it boil for 3 minutes stirring constantly so it doesn't burn. It will thicken. Carefully pour the hot mixture evenly on top of the crackers then spread using a spatula. Work quickly before it starts to cool. Put the crackers in the oven for 5 minutes. To make the cream filling, mix the cream cheese, vanilla, salt, powdered sugar, and marshmallow fluff. After 5 minutes, remove the crackers from the oven. Let cool for a few minutes, then spread a layer of filling on top of the crackers. Melt 2 cups of white morsels in the microwave on 50% power. Check and stir often. Don't overcook. Adding a splash of coconut oil helps the morsels get a smooth consistency. Pour and spread a layer of the melted chips on top the cream filling. It's ok if some of the filling mixes in with the melted morsels. Sprinkle with green sugar crystals immediately while the morsels are still hot. Let cool, then put in the freezer for 3 or 4 hours. Please note that the cream filling won't freeze completely. Remove from freezer, then break up the crackers into pieces. I try to break it along the lines of the crackers. Either melt a cup of white morsels in the microwave on 50%

Smoked Brisket and Fried Prosciutto Puff Pastry Pop-Tarts with Bqq Ranch Dipping Sauce
Puff Pastry Pop-Tarts:
2 frozen pre-made Puff Pastry Sheets
Smoked Brisket(shredded)
Fried Prosciutto(chopped)
Jalapeno Cream Cheese Spread
Sliced Pepper Jack Cheese
Grilled chopped Onions
Italian and Colby Jack Cheese(shredded)
1 Egg + 1 tablespoon of Water(egg wash)
1/2 Stick Butter(melted) + 1/2 tsp Garlic Powder
Grated Parmesan Cheese
Italian Seasoning
BBQ Ranch Dipping Sauce: Mix together.
1/2 cup Mayo
1/2 cup Sour Cream
1/2 cup BBQ Sauce of choice
1 tablespoon Jalapeno Cream Cheese Spread
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Salt/Pepper
Cajun Seasoning
Pinch of Italian Seasoning
Preheat oven to 400 degrees. Thaw out 2 sheets of frozen premade puff pastry dough on the counter for about 40 minutes. Unfold each sheet of dough and slightly roll out with a rolling pin. Cut each sheet in half making 4 strips. This recipe makes 4 savory PopTarts. Mark a line at the half way mark of each strip of dough with a butter knife. Don't cut through. Spread jalapeno cream cheese on the bottom part of each strip under the line and not all the way to the ends. Leave about a 1/2 inch border around the cream cheese. Then add a layer of sliced pepper jack cheese, shredded smoked brisket, grilled chopped onions, pieces of fried prosciutto, and shredded cheese on top the cream cheese. Make egg wash. Spread egg wash on the ends of the dough around the filling. Fold the top part of the dough over the bottom part. Press to seal. Use a fork and press down around the edges. Cut a little off the edges with a pizza cutter. This will help seal the dough. Spread the tops with egg wash, then using a knife cut 4 slits on top each pastry. Tranfer to a parchment lined baking pan. Bake for 16 minutes. Remove from the oven and spread garlic butter on top, then sprinkle with grated parmesan cheese and Italian seasoning. Put back in the oven for about 4 more minutes, or until the pastries are golden b
