My husband and I share the same love for food. He was classically trained at the Culinary Institute of America in Poughkeepsie and I was taught by my grandmother Nanny Rae in her home. Although our training was different our love for cooking and our community is the same and together we have created Cheech A’ Cini’s as a family run local business.
My mother is a Native of the Philippines. My father and mother met while he was serving in the Unites States Marine Corp. My father introduced my mother to the cooking School of Nanny Rae when she first came to America and it was in her kitchen that my mom learned to cook so many delicious meals. She became such an amazing cook in fact, that my father would make sure that Sunday dinner was always held at our home. Food was a huge part of my father’s life, especially because my grandmother took pride in every meal she put in front of her family. Losing my father at a young age, I always held on to his roots through food and decided to follow in my mother’s footsteps and learn to cook from my grandmother. I am truly blessed to be able to learn the tools of her trade. I spent many days in the kitchen with my grandmother, starting at the age of 5.
Frank spent a lot of his time learning how to cook through the love of watching cooking shows such as Lidia’s Kitchen (Lidia Bastianich) and his all time favorite Jacques Pepin. He knew at a young age that he belonged in the kitchen. He trained in a vocational school his sophomore of High School and worked in a local Pizzeria in Manalapan, NJ called Cucina Alessi. He then entered the Culinary Institiute of America where he gained the experience that lead to him working in some amazing kitchens in New York City.
Frank and I are both native Staten Islanders and we decided a food truck was the way we could share our food with the world as well as a place where our creativity could shine. Cheech A’ Cini's specializes in PastaCini’s, a gourmet Italian pasta & cheese ball. We came up with the PastaCini together by taking my grandmother’s recipe of Pastica (Macaroni Pie) and putting a twist on it so that everyone can enjoy this delicious Italian fare on the go.
