Healthy Fact of the Day: Roast Turkey Breast with Glazed Vegetables is a wholesome and festive dish that offers lean protein and a variety of colorful, nutrient-rich vegetables.

Roast Turkey Breast with Glazed Vegetables

For the Turkey:
1 turkey breast (about 3-4 pounds), bone-in and skin-on
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried sage
Salt and black pepper to taste
For the Glazed Vegetables:
2 cups baby carrots
2 cups Brussels sprouts, halved
1 cup sweet potatoes, peeled and diced
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon balsamic vinegar
Salt and black pepper to taste
For the Gravy (Optional):
Pan drippings from the roasted turkey
2 tablespoons all-purpose flour
2 cups chicken or turkey broth
Salt and black pepper to taste

Preheat your oven to 375°F (190°C).
In a small bowl, mix together the olive oil, dried thyme, dried rosemary, dried sage, salt, and black pepper to create a seasoning blend for the turkey.

Place the turkey breast on a roasting pan. Rub the seasoning blend all over the turkey breast, ensuring it's well coated.

Roast the turkey breast in the preheated oven for about 20 minutes per pound, or until the internal temperature reaches 165°F (74°C). Baste the turkey with pan drippings every 30 minutes

While the turkey is roasting, prepare the glazed vegetables. In a large bowl, toss together the baby carrots, halved Brussels sprouts, diced sweet potatoes, olive oil, honey, balsamic vinegar, salt, and black pepper.

Spread the glazed vegetables on a baking sheet and roast in the oven for about 25-30 minutes or until the vegetables are tender and caramelized.

Once the turkey is done, let it rest for about 15 minutes before carving.

If making gravy, use the pan drippings. In a saucepan, whisk together the flour and pan drippings over medium heat. Gradually whisk in the chicken or turkey broth until the gravy thickens. Season with salt and black pepper to taste.

Serve the carved turkey breast with the glazed vegetables and drizzle with gravy if desired.

It is old year's night 2022. I am trying to give you this recipe for Guyanese Cook-up Rice which is one of the iconic meal that you will find tonight in the pot of nearly every kitchen in Guyana.

This is a one-pot meat and there is no one recipe for cook-up rice. It is a highly customizable dish in terms of what type of beans and meat you can include.

Old years night is not complete without this - because we must go into the new year with food with the pot, ad money in your wallet.

INGREDIENTS
10 cups water (if you like it less watery, add 8 cups water instead)
1 onion diced
2-3 scallions chopped
3-4 garlic cloves, chopped
1 cup green pepper, chopped (optional)
1 sprig of oregano, coarsely chopped
1 small sprig of rosemary, coarsely chopped
1-2 sprigs of thyme, removed from stem
2 bay leaves
2 wiri wiri pepper (or crushed red pepper)
1-2 small bouillon cubes
2 cups coconut milk
2 tbsp cassareep
1 tbsp old bay seasoning
½ tsp black pepper
1 cup chopped spinach (optional)
1 15.5oz canned beans of your choice or *dry beans
2 ½ cups parboiled rice (any other type of rice will be too soft to hold up to the heavy ingredients in this dish)
2-3 pounds of your choice of meat

CHICKEN:
2-3lbs chicken (or any type of meat you prefer)
season meat to your tastes, but here is an idea of how I seasoned my chicken
2 tbsp of onion and garlic puree
1 tsp cassareep
cayenne pepper
black pepper
1 tsp salt
2 tsp oil

INSTRUCTIONS
IF YOU ARE USING DRIED BEANS:
In a large pot, bring 10 cups of water to a boil. Add dried beans to boiling water.

In the meantime, dice onions, garlic, scallions, and green pepper add to the boiling water. Add in wiri wiri pepper or crushed red pepper, fresh herbs, bay leaves, and bouillon cubes.

When beans are slightly soft, add coconut milk, cassareep, and spinach (if you are using spinach). Let this mixture boil for 15 minutes.

Place rice in a mixing bowl and run the tap water over it on low, until the water goes clear (this method is how we wash rice in the West Indies). Drain water from rice and add to the pot.

Add old bay seasoning and black pepper. Let rice boil until the rice is cooked, you can take one out to feel if it is soft or not. When the cook-up is close to being done, you will see that it is wet and soupy looking, there will hardly be any liquid left in the pot. Now at this point, add your cooked meat and give it a good stir.

Remove from heat and cool. This will taste the best on the next day, trust me!

IF YOU ARE USING CANNED BEANS:
In a large pot, bring 10 cups of water to a boil.
In the meantime, dice onions, garlic, scallions, and green pepper add to the boiling water. Add in wiri wiri pepper or crushed red pepper, fresh herbs, bay leaves, and bouillon cubes. Let ingredients cook for 10-12 minutes.

Add in coconut milk and cassareep and spinach (if you are using spinach). Let mixture boil for 7-8 minutes.
Place rice in a mixing bowl and run the tap water over it on low, until the water goes clear (this method is how we wash rice in the West Indies). Drain water from rice and add to the pot.
Drain and rinse beans and add to the pot. Add old bay seasoning and black pepper. Let rice boil until the rice is cooked, you can take one out to feel if it is soft or not.

When the cook-up is close to being done, you will see that it is wet and soupy looking, there will hardly be any liquid left in the pot. Now at this point, add your cooked meat and give it a good stir.
Remove from heat and cool. This will taste the best on the next day, trust me!

Almond Joy Paleo Pancakes

Thanks to a base of almond flour and egg, this recipe is quite the gluten-free breakfast treat.

Delicious as classics like blueberry and banana pancakes are, it’s always fun to mix things up. Using a base of almond flour and egg, this recipe is quite the gluten-free breakfast treat. With coconut and chocolate mixed in, it honestly takes like a candy bar. What better way to start the day?

Directions:

Combine all ingredients except oil in a medium bowl and mix well.
Heat a skillet over medium-high heat and grease with coconut oil.
Pour batter into skillet to make three equal-sized pancakes. When bottom is lightly browned and bubbles rise in batter, flip pancakes. Continue cooking until cooked through.

Ingredients

1/4 cup almond flour
1 egg
Pinch salt
Splash vanilla extract
1 tablespoon coconut cream
1 tablespoon unsweetened shredded coconut

TRIPLE BERRY SMOOTHIE

INGREDIENTS
1 banana
1 c. frozen strawberries
1 c. frozen blackberries, plus more for garnish (optional)
1 c. frozen raspberries
1 1/4 c. almond milk
1/2 c. Greek yogurt

DIRECTIONS
In a blender, combine all ingredients and blend until smooth.
Divide between 2 cups and top with blackberries, if desired.

EGG CURRY

Today I have decided to share this recipe, it so much bring me back to my childhood days when we wanted to make a quick meal.

Eggs can be used in many ways as a cooking ingredient. Many people who do not eat meat, eat eggs. Delicious and quick this curry can be ready in 25 minutes.

Ingredients

4 boiled eggs
1/2 onion sliced
2 cloves garlic sliced thin (or crushed)
1/2 tomato sliced
1/2 tablespoon curry powder
1 scallion
dash of black pepper
1/4 hot pepper
1 tablespoon vegetable oil
1/2 cup water
salt to taste (less than 1/4 teaspoon)

INSTRUCTIONS:

1. Prepare the onion, hot pepper, garlic, scallion and tomato and set aside.

2. Put the eggs to boil on a medium to high flame (cover eggs with cold water and bring to a boil), then as soon as it comes to a vigorous boil, turn off the heat, cover the pot and let it stand in there for 10-12 minutes.

3. Heat the oil in a sauce pan on medium/high heat, then add the sliced onion and garlic and allow to cook for a few minutes. Until they go soft, release their aromatic oils and stars to brown on the edges. Then turn down the heat to medium /low and add the curry powder and slices of hot pepper (if you need some good madras curry powder, check out the store – where you can find tons of Caribbean goodies) and stir. Allow this to cook for about 3-4 minutes, so the curry won’t have a “raw” taste to it.

4. The next step is to add the water and give it a good stir and bring it up to a gentle simmer. Then add the slices of tomato and scallion and top off with the eggs. Cut the eggs in half before adding and be very gentle at this point forward, since the eggs will fall apart easily. Add the salt and black pepper at this point as well.
On low heat, cover the pot and allow to cook for abut 4-5 minutes, so the sauce thickens and all the flavors get a chance to marry together. If you find that the sauce is a bit runny, cook for an extra minute or two with the pot uncovered.

Serve with Rice or Roti - hope you enjoyed

RECEIPE FOR TODAY

Curry Beef - Guyanese Style

1 lb stewing beef
1 onion,
2 cloves garlic
3/4 pint stock
1 oz curry powder
1 tbsp oil
8 oz potatoes, cut into pieces

Method

1. Wipe meat and cut into large pieces.
2. Chop onion and garlic. Mix curry powder to a paste with water.
3. Season meat with your favorite spices
4. Fry onion, garlic and curry lightly in the oil, add meat and fry.
5. Add stock, bring to the boil. Add potatoes, reduce heat and
simmer until meat is tender.
6. Place the meat and vegetables in the center of the dish, pour
over gravy.

Serve 6 with either rice or roti then enjoy this tasty Guyanese cuisine.
