Will be back in Brooklyn in little over a week. Been cooking at a sleep away camp and have come up with some new vegan items. Made a vegan vegetable nugget with tofu. Also a tofu and lentil loaf to match a meatloaf.

With Passover almost over and if running out of food ideas. Matzo Pizza. Slice of matzo, spread with tomato sauce. Sprinkle with pizza seasoning, add grated cheese. In a skillet sautee sliced onions, mushrooms and green peppers. Add this on top of cheese. Bake in 350 degree oven for 5 minutes or until cheese is melted.
