It is sold by weight in stacks and taken home for locals to eat with their meals. Perhaps also used to wrap kebabs like lavash is?

Chef Andrew cutting the fresh burrata cheese
Burrata - literal translation is butter - it's the most amazing fresh cheese we've ever had the priviledge of tasting. The culinary team of cuisinEtc has just returned from our hunt for the birth place of burrata and the pleasures of fresh buffalo milk cheeses such as burrata, ricotta and mozzarella. What a journey it's been - more on that as we catch up with photos and stories but in the mean time enjoy this video of the most delicious creamiest of fresh milk cheeses, made to order for us!! while we waited in a local shop in Andrea, on the Puglia coast, and enjoyed with our new friend (who you hear chatting away on his mobile in Italian = no idea what he is talking about or to whom) while Chef Andrew experiences his first taste of this cheese we jokingly call fresh mozzarella on steriods and edible crack! Although buratta has been made in Puglia since the 16th century, it's only recently been rediscovered as the darling of the culinary world. This was the freshest and most amazing version we've experienced ever and was worth the crazy amount of driving and exploration that brought us to this experience this summer.
