TABLE FOR TEN will take place on Sunday, March 5th 2023 at the brand new VEA Newport Beach. Chef Pascal Olhats is Event Chef Chair! The event will feature the top chefs in OC cooking table-side for ten guests. Chef Tables are available: tableforten.org

Steamed beet salad
Thyme crusted seabass
Roasted rack of lamb
Real ratatouille timbal (not the movie version)
Potato gratin
Warm apple tarte Tatin.
Voila!

I usually prefer to serve my dinners platted but if the client wants the event as a buffet we made in style and cook with amazing ingredients.
Northern California ranch raise lamb herb and feta sfutted, local farmed raise hen breast with truffle foie gras sauce, whole deboned 12 lbs roasted salmon fennel beurre blanc, balsamic marinated kale with local grilled peaches , pickle onion and roasted pecans...these were the stars of the diner. You know me thru my personalized French Cuisine but may not know that I am a big fan of Italian cuisine as it is regularly part of my cooking either for myself or for special events. Some of the iconic preparations were shared to me by a very good Italian home cook while visiting Italy.
