Owner and Executive Chef, Fred Detore, initially founded Emerald Cove Catering Company in 1999 as a referral based, personal chef venture. Emerald Cove Catering Company later expanded in 2007 as a full service catering company, serving the greater Seattle area at weddings, corporate events and conferences, private parties and special events. Serving repeat clients such as: Weyerhaeuser, General Motors, Pepsi, The President of Vietnam, Chase, Duwamish Tribe, Nike, Harborview, YMCA, PSE and many more. In September of 2009, Emerald Cove was awarded a contract to provide exclusive catering to the Airport office building serving hundreds of customers daily for small meetings, large dinner parties, appetizer receptions and all day conferences with outstanding feedback and countless happy customers bringing repeat business back to both the conference center and Emerald Cove. Owner and Executive Chef, Fred Detore, found his passion for cooking in his grandmother’s kitchen, perfecting the secrets of Italian cuisine. In his early teens Fred began working in the restaurant industry and later graduated from Western Culinary Institute, with honors. In the early 90’s he interned as a Chef for a celebrity’s private Beverly Hills estate, ranging from dinners for two to extravagant parties for 12,000. Following his internship, Fred came back to the Pacific Northwest working as a Chef for Seattle’s famous restaurants Palisades and Il Fornio. Fred later applied his experience, knowledge and creativity to the opening of a thriving local Burien restaurant as the Executive Chef and consultant of their then newly developing catering company. Seattle native Mark Guth, Head Chef, has been practicing his craft since his freshman year of highschool, when he discovered he would forego the office life in favor of a career in the kitchen. As a teenager he got his start frying chicken and making pizza dough, then quickly moved into the world of high-end catering at McCormick and Schmick’s and Salty’s on Alki. After graduating from the Culinary Arts program at South Seattle Community College he went on to be the Sous-Chef of Twelve Basket’s Catering at age 19. Thanks to his unyielding dedication and a series of talented mentors, Mark now works as Head Chef of Emerald Cove Catering, blending elegance and simplicity with the local ingredients and unique flavors the Pacific Northwest has to offer. Also an award-winning homebrewer, his life-long passion is to master everything that touches the tastebuds; every preperation, every dish that exists (or doesn’t), any style. To be the most versatile chef out there. But that’s just the thing, says Mark, “No matter how much you know, there’s always more to learn. You can never know everything.” So the quest continues…

A key player to the success of Emerald Cove Catering Company is Food and Beverage Director, Carly Duke. Carly has worked both as a Chef in local restaurants and as an Marketing & Sales Associate and Manager for various catering companies, giving her a diverse assortment of knowledge and skills making her a significant asset to the company. Along with our core team members, the Emerald Cove family is composed of dozens of on call staff that are fully trained and ready to assist with any event. Our management team is comprised of a diverse group of individuals all bringing their unique experiences to the company. Emerald Cove Catering Company has high expectations and guidelines so that our employees and customers receive the best possible experience.
